Can I freeze a cauliflower cheese?

It's cauliflower (and a bit of broccoli), quartered hard boiled eggs, with cheese sauce poured over and mashed potato on the top with grated cheese on the top of that. I made a little portion for me and added sweetcorn (yum) and have eaten that, and then made a 2-person size one for DH and DBIL (who's currently staying) but for various reasons looks like neither of them will be in for dinner tonight. Do you think it would freeze OK?

PS it needs baking in the oven before eating, I haven't done that yet...

Not sure what the texture of hard boiled egg would be like after freezing (and indeed if reheated) Cauliflower can go a bit watery but wouldn't be too bad. It would be safe but probably not v nice.

Why not put it in the fridge. Should be ok for up to 48 hours or so.

You can - but it will affect the texture a bit. Eggs and mash don't really freeze that well, and cauli goes very soggy.

Mmm... you're not making this sound great. I've put it in the fridge for now. Trouble is, I bought the cauliflower on Sunday to make cauliflower cheese just for me so now that's twice in a week I've had it - I really don't want it again! Never mind, I'm out both the next two evenings, I'll maybe make the men eat it on one of them. It's just not a very blokish thing to eat - no meat for one thing! I know DH will protest!

Give them a couple of beers first, then serve it on top of a gammon steak or something.

IME experience it just turns to mush when unfrozen. Still makes a nice soup though if blitzed up in a food prcoessor and microwaved.

Gah well it's still sat at the bottom of the fridge - I was out both last night and tonight. DH made himself something else last night, dunno what BIL had, and tonight there's still no sign of DH, think he's out, and BIL has texted to say he's staying at a mate's. So I think the cauli cheese is for the bin! Never mind.
