When the sun starts shining, I get fed up with my usual family meals (bolognese, sausages, pasta etc) - but what to cook that is still a substantial meal and relatively child-friendly?

I suppose I have salads/couscous/tarts in mind, which include some protein. My DCs are not overly fussy.

Please inspire me with your lovely summery family recipes

I make a big salad which does us two days, with Jersey Royals and chicken. Or goats cheese tart is very nice.

Sounds good notwavingjustironing. Anything that lasts for two days is a bonus.

What else do you put on the tart, along with the goat's cheese?

roasted red pepper is good with goats cheese

The salad is usually a huge selection of stuff, all chopped up very small

lettuce, cucumber, red onion, radish, advocado, melon, red pepper etc.

Then any left over new potatoes on the first night get slung in for the second night (or one of us takes it for lunch the next day).

Marinate some chopped up chicken (make your own or we love the Nandos sun dried tomato marinade). Leave it for a short while (or overnight).

Thread chicken pieces onto some skewers and grill. Serve with some salad, new potatoes and warm pitta bread so people can put chicken into the pittas.

My dc love this because of the novelty of having the chicken on skewers.

BTW works with salmon chunks too - mmmmm

I made a delicious butternut squash and lentil salad for lunch today, I'd made enough for tomorrow too except dd1 has just scoffed it.

Roasted half a butternut squash cut into cubes with bit of oil and seasoning. Added puy lentils (15 mins to cook), rocket, spring onion, pine nuts, radish, tomatoes.

Had planned to add some feta to it tomorrow.

Also always cook more new pots than you need so the next day you can either saute (yum) or make into potato salad.

Other than that, no idea and will be watching.

Mmm, like the sound of the marinaded chicken/salmon.

The butternut squash and lentil salad sounds really nice too, and a bit different.

greek potato salad

fennel fajita

bacon and egg pasta salad

wholemeal pitta's filled with baked beetroot and feta salad

glazed salmon with egg noodles

all go down well with my toddlers

thanks fatsatsuma. Its my online recipe database for when we travel... can't take my 200 cookbooks with me sadly . can recommend the brownies on there too for summer puddings .
