i've got to menu plan for 3 of us for this week, got £45. inspire me please! so far i've thought of

home made pizza (my mums lovely recipe)
diced turkey thigh tikka masala
something with baked potatoes

If you have any turkey thighs left you could make fajitas (I am obsessed with them atm, would eat them for every meal if I could )
If the weather is good near you (is lovely here) a nice big salad? Maybe tuna or ham?

Veg will be your friend this week. Stock up on it to start with, and you should be fine.

To your ideas I would add:

-Veg and chickpea curry with rice (and lime pickle?)
-Roast chicken pie (roast the chicken, strip the meat off, save half for the following day and bung half into a pie dish with leeks in white sauce, peas, and carrots. Top with pastry, and serve with buttered new potatoes)
-With the leftovers you can make roast chicken and mushroom pancakes (make pancakes and stuff with the roast chicken, fried mushrooms and cream. You can add flavour with tarragon and dijon mustard.
-Use the carcass to make stock for veg soup (I like lettuce soup), and serve with homemade savoury muffins (spinach and parmesan are good, with chopped up sundried tomatoes if you have any)
-Hot potato salad: boiled new pots, tossed while they are still warm with spring onions and shards of crispy smoked bacon, and homemade vinaigrette. Eat once it's cooled slightly.

With your suggestions above that will mean you need to buy:

flour
tinned toms
mozzarella, cheddar and parmesan cheese
whatever else you want on your pizza - I like garlic mushrooms
baked beans or whatever else you want on your baked potatoes (I like cottage cheese on mine)
diced turkey thigh
tikka sauce
rice
(lime pickle?)
chickpeas for veg curry
veg: onions, butternut squash / sweet potato, leeks, spring onions, baking potatoes, new potatoes, frozen spinach (or fresh if not too pricey), carrots, frozen peas, lots of mushrooms, and whatever else looks good - broccoli for the curry? Lettuces for the soup? Tomatoes? Garlic?
a free-range chicken
puff pastry (save the trimmings and make little tarts for lunch with leftover cheese, mushrooms and bacon, to have with salad)
Cream
Mustard/tarragon if using. Otherwise the rest of the parmesan would be nice instead.
Smoked bacon
Butter
Milk
plus whatever else you usually need: bread, eggs, fruit, yoghurt, etc.

Wed: Prawn and Pak Choi stirfry with rice
Thurs: Chilli with corn bread crust
Fri: Country Ham, Biscuts, Black eyed peas, fried okra

Monday: cheesy mash and beans

Tuesday; lentil and rice tortilla wraps
hunt pie (using a little left over

Wednesday: lentil sloppy joes
savoury rice with some more of the
pork

THursday: cream of chicken soup, bread
carrot and onion pie, with the
last little bit of pork, potatoes,
brocolli
Friday: corn fritters, fruit, yoghurt
pilchard loaf, wedges, mixed veg.

Breakfasts are banana loaf, hot rice cereal, cheese and apple muffins, oatmeal scones, cereal.

Baking is beetroot cake and syrup loaf.

That means that 1 2kg pork shoulder thing will make 4 meals for 4 people. The cream of chicken soup uses stock that I made from a carcass and 4oz of cooked chicken.

The best thing for keeping costs down is to have meat free a few times, plan your leftovers and bake your own snacks and treats. Base your meals around the carbohydrate and then build from there. For example plan to use rice so make enough for savoury rice, hot rice breakfast and maybe eggy rice for lunch, Or plan a pasta bake using veg and a small tin of tuna or a handful of chopped chicken. You can cook enough pasta to have pasta salad for lunch the next day.

well tonight im having pasta with pesto, tinned salmon, frozen veg and grated cheese . most supermarkets now do a value pesto and my supermarket always seem to have dinted tins of salmon in the 'reduced to clear' isle. always make too much so put with salad for OH lunch.

pasta with garlic and herb passata(about 45p) and a jar of franks, frozen veg, and cheese.

i always buy frozen veg as it lasts for ages, but any other veg i have lurking around the fridge i make into soup gruel and have with cheese or sardines on toast.
Also found ((www.somerfield.co.uk/foodanddrink/recipes/Sticky+Fingers+Pork this)) recipe whilst flicking through my grandmothers supermarket mag.
can often find belly pork in b.o.g.of deals.

also roast bignormous chicken as leftovers can be used in sandwiches, salads and to substitute the salmon and saugages in above pasta recipes.

pork mince. One packet can be used to stuff peppers (mince, garlic, onion, apple, chilli, an egg, soysauce and whatever else is lurking in the back of the fridge)and to make a stir fry with the next day.

my mother always used leftover veg on a monday to make a gratin. veg, white sauce, grated cheese baked in oven, which she served with leftover chicken.

For this week (for DH and 8y DD and also me - I am non meat eater) -

Monday: Breaded fish, wedges and mushy peas

Tuesday: tuna steak with some form of citrus dressing, roasted new potatoes and baby veg

Wednesday: chicken fajitas

Thursday: Sausage and mash, Yorkshire pudding

Friday: me and Dh out for meal; DD, her little cousin and PIls - spag bol or chilli

Not planned for weekend as generally eat out.

Tonight we had mattar paneer with rice and cumin roasted cauliflower. The cauliflower was on special offer in Sainsbos and the mattar paneer costs v little (bumper bag of frozen peas, an onion, spices etc already in cupboard) other than the paneer, which I think was about two pounds.

Tomorrow we're having lentil chilli (v cheap) and rice.

Weds = chickpea tagine thing and cous cous

Thurs = baked potatoes, pitta pizzas and salad (maybe a contender for your 'something with baked potatoes' meal?) I just buy Sainsbo's pizzas which are something like 2 for 70p and a jar of red pesto (whichever is on special offer and you only need a few spoonsful), Basics mozerella is fine (and I am a real snob about Basics stuff usually) plus some sliced onion and peppers and a few olives.

Fri = dd's birthday, so we will probably go out

Saturday = no idea

Sunday = veggie lasagne with salad

Taffetacat, those are 2 of the easiest things that I make, they are a bit basic, but the children like them.

Shredded pork rolls:

This is plenty for about 5 people,
2lb left over roast pork
1 onion, finely chopped
1 cup barbecue ketchup mixed with about 1/2 a cup of water
or
some barbeque cooking sauce out a jar

Mix everything up in a casserole dish and heat in a low oven (about 160) for 3 hours or so, checking periodically that there is enough liquid to keep it moist and stop it burning. When the pork is soft enough to fall to bits, shred it between 2 forks until there are no lumps left and you have a dish full of juicy shreds. Then just serve it inside buttered rolls. My kids absolutely love this, especially with corn on the cob and coleslaw. You can use any kind of meat to make it, but pork or chicken are the most popular in here. It makes a little meat go a long way. Yesterday, I used 12oz pork for 4 people.

Pilchard loaf

1lb wholemeal loaf, unsliced
1 large tin pilchards in tomato sauce
1 pint white sauce
1tspn mustard
1tblspn vinegar
salt and pepper

Slice the loaf, lengthways, into 5 slices. Mash the pilchards into a past. Spread the pilchards on the bread and reform into a loaf shape. Put into a deep baking dish. Mix the mustard and vinegar into the sauce, season and pour over the loaf. Bake at 180 for just over 1/2 an hour. Serve in slices with green veg and potatoes. Cheap, cheerful, nutritious and easy! THis is enough for 4 to 5 people.
