What can I use to sandwich "birthday cake" together?

Trial run for ds's birthday cake last week.

Victoria sponge, sandwiched together with jam and buttercream, then covered in royal?(ready-roll) icing.

It was sickeningly sweet. It made my teeth hurt just looking at it.

Any suggestions for an alternative? Please. Thank you.

Really needs to be iced as having characters made out of sugarpaste on top

I would just go for the jam in the middle, you don't need buttercream as well IMO.

Ready roll icing will be sickeningly sweet. At a push you could stick the letters straight to the top of the cake dusted with icing sugar but it won't look as "done" so you may be stuck with it (you could just cut it off before eating)

Whipped cream with strawberries cut up small in to it - plus/minus jam works well. Though means you need to eat it same day, ideally.
Do you need the whole of the top to be covered in Royal? I have done just characters/numbers out of Royal rather than whole thing.
Other option is to use Philadelphia mixed with icing sugar and drop vanilla essence.

Make a madeira sponge - more robust than VS and better for having fondant icing on it. You'll need to stick the fondant icing onto the cake with buttercream though.

If you're planning on using royal icing you'll need a base because otherwise it will soak into the cake.

Sandwich with cream? It makes the shelf life that much less tho.

TBH - kids birthday cakes are eye wateringly sweet. After they've all managed to spit over it whilst blowing out the candles despite it being the birthday girls job, then you'll be happy not to eat it!

birthday boy. SOrry. And he's a tad younger than I assumed.

Also you can top the cake with buttercream and stick the characters in that. Still sweet but a whole heap less hassle.

Mascarpone and pureed raspberries with a teeny bit of sugar added but still quite tart.

Or lemon curd.

Whipped cream would be fabby, but ideally I will be making on Friday evening, to be consumed Sat afternoon.

He's 3, so tis just a family tea, so not uber important, although looks more important than taste

Just realised, when I said characters, I meant, wee people, well piplins actually, waybuloo cake.. Aspiring to this although dont really stand a chance.

Gah its really stressing me out - I have major interview tomorrow, holiday next sunday, and could really do without this. I want it to look like for ds, and also to prove to my mum that I actually AM capable... she made his first birthday cake I wasnt allowed

Geordie - I'd be tempted to do 2 cakes - yes I know - I'm crazy.

One to look cute and one that tastes nice.

A cake like that would work well with just plain old maderia under it.

surely it's all the royal icing that makes the whole thing so sweet?

I'd go for the jam and buttercream in teh middles and then a thin layer of buttercream on top with decoration.

The only thing is, there will only be 8 of us, inc ds, 4 of whom are on a diet and 1 of whom doesnt eat cake. Normally wouldnt be a problem as would send to dh's work as they are like gannets in there, but we are on holiday next day so dont really want to be stuck with 2 cakes to sling in the bin.

I should have just bought one from Tesco instead of trying to be alpha-mummy.

Have spent close to £50 already on tins, icing, books, new whisk yadda yadda

you could easily plonk those figures on top of a thin buttercream topping (with no buttercream on teh sides, to reduce overall sweetness)

YUK to buttercream

i always do jam and icing sugar

then for chocolate ones do an icing with melted butter, cocoa, icing sugar and a splash of milk

I know, I hate butter cream too.

Was thinking, could make sponge day before, sandwich together with cream and strawberries, then either just place the characters on top of the cake, or put them on the board?

You see butter cream is nice if you whip it for about 5 minutes and add a teaspoon of vanilla extract.

Sieve icing sugar on top, characters wherever, birthday boy won't mind!

my kids one si always bog standard choc cake
smothered in the icing i mentioned below
then smartied pressed into it all over
kids go bananas for it and is piss easy
no thomas tank crap here
