recipes for lentils / chick peas anybody?

katechristie · 24/04/2010 21:35

Have never really cooked with either lentils or chick peas, apart from add chick peas to a lasagne or other meat dish occaasionally to bulk it out. I'd be ever so grateful if anybody would share any recipes for these ingredients, either as veggie dishes or as part of another dish. TIA.

If you google 'hugh fearnley whittingstall chickpea and kale curry', you'll find a delicious recipe from the Guardian which my friend cooked for me recently.
Sorry can't link as I'm on an itouch .

I make a lush chicken curry with red lentils in it.

Fry some onions and chopped chicken breast.
Add a tin of chopped tomatoes, handfull of lentils, handfull of raisins, chopped apricots, curry powder, spoonfull of marmalade, salt and pepper, stock cube.
Simmer for as long as it takes to cook lentils.

I love my spicy lentil and tomato soup.

Fry an onion in oil with garam masala and cumin and a little chili powder. Chuck in 2 tins of tomatoes, about 4 tbsps of red lentils, add boiling water and a stock cube and simmer.

When the lentils are soft, blend and eat!

MarkStretch · 24/04/2010 21:55

This is very tasty too.

Ooooh. Another:

Soup.
Pan of stock, I usually make it after boiling a ham joint - is practically FREE! Or water with 3 stock cubes added. Add a roughly chopped onion and a cup of red lentils, salt and pepper. Cover and simmer for 1/2 hour then blitz with a hand blender. It may need thickenning a bit with cornflour as it tends to separate a bit.
Is verr nice even though it looks nasty.

Right. This is THE BEST chickpea curry. I am salivating thinking about it.

Fry some onions. Add a load of...hang on, let me go and check...ok, Patak's balti paste.
Cut up some new pots and carrots and simmer .
Add onions.
Simmer away merrily.
Add a load of chickpeas. Simmer.
Add a sachet or two of creamed coconut.
Add a load of peas and chopped green beans.
Simmer.

Mmmmmm, chickpea curry...

Fry an onion and a stick of celery and a carrot chopped very small until softish and browning. Add two chopped or mushed cloves of garlic and fry for another minute or two. Add a couple of mugfuls of chopped tomatoes (you can skin them if feeling virtuous). Fry until the tomatoes go slightly mushy. Chuck in a few handfuls of brown or green lentils and some water/wine/stock (a mix of all three is best) and some chopped thyme or dried thyme. Boil fiercely for about ten minutes and then simmer until the lentils are done. Top up with water as necessary. Serve with crusty bread or rice and a salad or as a side dish for meat of some kind (roasted chicken pieces or lamb chops go really well). If you're serving it as a main dish, a few rashers of bacon chopped up and fried with the garlic is a good plan.

puy lentils, cooked til tender with thyme sprigs in the water, drain and add 3 parts of olive oil to two balsamic vinegar,to make enough dressing to coat, and very finely chopped red onion,(half to one depending on amount of lentils)then add chopped feta.this salad is good with a big green salad.

Cook some onion and garlic. Add some spices. Add some chopped up fresh tomatoes and some water and cook for ten minutes. Add cubed potatoes and cook for ten minutes. Add a tin of drained chickpeas and cook until the potatoes are almost done. Add a couple of spoonfuls of natural yoghurt and some cashew nuts and just warm through. Lots of fresh coriander to serve.

Chick peas make a nice salad if you toss them in oil and lemon juice with some very finely chopped shallot, a little bit of garlic, finely chopped chilli (to taste) and coriander leaves. Very simple but very tasty.

LadyBiscuit · 25/04/2010 19:11

This recipe is absolutely delicious

cleanandclothed · 25/04/2010 20:02

Put 1 can of chopped tomatoes, 1 can of chickpeas and one small can of tuna in a pan. add chilli/harissa/garlic to taste. Heat. Serve with couscous.

Horton · 25/04/2010 20:20

Oh, just remembered. I make this quite often with any beans I happen to have around. It works fine with chick peas and is delicious.

apsie · 25/04/2010 20:31

Stir fry some crushed garlic, paprika, pinch of chilli powder in oil. Add a drained can of chick peas, cook for 2 mins. Add a can of chopped tomatoes, simmer for 5 mins, then add a bag of fresh spinach leaves and cook till the leaves are all wilted into it. Serve in a big bowl with flat breads or naan, or as a side to a curry. This is my fave quick comfort dinner!

MamaChris · 25/04/2010 20:40

fantastic warm puy lentil salad.

cook the puy lentils and drain. you can then put in airtight container in fridge for a couple of days if you like.

then fry diced courgette and pepper over a gentle heat for a couple of minutes. add some chopped sundried tomatoes and the lentils and heat through. add grated rind of one lemon, all its juice (less if you prefer), and a diced avocado.

really easy and yummy

belindarose · 26/04/2010 09:46

Fry some pieces of chorizo and salami (or just one or the other if you're not as greedy as me) with onion. Add stock, tinned tomatoes and puy lentils. Simmer for as long as you like (usually an hour or so), until the lentils are cooked.

katechristie · 26/04/2010 14:42

oh fantastic, thanks all so much, these all sound yummy, not sure what to start with first now
