Straightforward bread recipe please and where can I get fresh /active yeast?

I am looking for a simple white loaf recipe (not bread maker one) please and also where can I get active yeast as the packet stuff just doesnt cut it for me but cant find the fresh stuff anywhere.

would you be interested in the dried stuff in a tub, rather than a packet? you reactivate it with sugar and warm water before putting it in the bread? if so, that's near the packet stuff in the supermarket.

Bread recipe - put the kettle on; fill 1 halfpint glass 3/4 full with cold water and a tsp of sugar;fill 1 pint glass 3/4 full with cold water. Put 1 packet white bread flour in a large bowl. Add 25ml veg oil (generous sloosh) and a pinch of salt.

When kettle boils, fill both glasses with the boiling water. add dessertspoonful of dried active yeast and leave for 2/3 mins or as directed on packet. Pour yeast water into bowl; add most of the pint glass of water too. Mix with a knife then with your hands. add more water if necessary. turn out onto floured surface and knead well for 2 songs on the radio until stretchy and smooth. Place back in bowl, cover with tea towel and put in a warm place for an hour, or as long as you've got. (If you want to take more time, e.g. if you are doing this first thing, put it in the fridge instead.)

when the dough has doubled in size, punch it down and reknead. Shape into the loaf/rolls you want and leave covered in the warm again. Bake for 30 mins (loaf) or 20 mins (rolls) at 200 degrees.

sorry, you add the yeast to the half pint glass. actually i suppose it doesn't matter which glass really.

Ask at the supermarket bread counter, sometimes they have fresh yeast.

Buy a large chunk then chop it up into portions and freeze.

I add a good spolsh of olive oil and a pinch of salt too, but basically that recipe.

OOH, and crush up a vit c tablet and add that, that makes it rise really nicely.

Yes, you can get it in Asda/ Tescos etc if there is a bakery. It's really cheap so they usually just give you some for free.

As for recipes, I always use Richard Bertinet's. He doesn't knock it back and uses a method called the French Fold. It's much better than English bread.

Chica, agree, Richard Bertinet's method is truly the best!

Tully, ASDA give it out for free. Sainsbury's sell it, but often deny they do so at my branch. I just have to be really firm with them and make sure I know that they do have some!
