Made a lovely smoked salmon and asparagus quiche but have lots of fresh dill left over.
Any interesting ideas?

Chop it up and mix it with greek yogurt and a pinch of salt and use like a dip or mezze garnish. Chop it up and add it to rice dishes in the Persian style...

I adore dill. I grow loads of it every Spring. I eat it on its own - its a great aid for digestion. Its also really gorgeous added to salad.

It goes brilliantly with most fish - I always use it when baking fish in foil, in fish pie, in fishcakes etc. Its also good in fish pates, eg smoked mackerel.

It doesn't freeze brilliantly - have done it before, better than basil but not as good as some of the more robust herbs.

Its also good for adding to pickled veg eg cucumbers. Or I have a dill relish recipe for burgers I can post if you're interested.

It is great on boiled potatoes

If you don't use it all up, freeze it chopped up into ice box tray and then just drop a cube or two into future cooking, it will look more mushy but the flavour will be fine

Get some fresh salmon and make your own Gravad Lax.

Its easy, honestly!
