I've just bought an industrial sized pack of bacon. What can I make a big batch of and freeze?

I'm not the world's best cook, so something simple and tasty that I can just defrost, heat up and serve with pasta/potatoes etc would be good.

Not too tomatoey,as DP doesn't like them, and no liver please.

I'd be very grateful if someone could point me in the direction of a recipe please...

Fry up bacon, mushrooms, leeks and stir in some creme fraiche towards end? Serve with tagliatelle.

www.bbcgoodfood.com/recipes/3453/quick-chicken-chasseur is very easy and not too tomatoey as the oxo cubes make it a very meaty sauce. I have made it with varying amounts of bacon and chicken depending on what I have. We serve with pasta, but mash or rice would also work.

Do I add the creme fraiche before I freeze it? Or when I'm heating it up after defrosting?

Why not just freeze the bacon in batches?

When you're heating it up. Never a good idea to freeze things after the cream/CF has been added.

Also, not to be obvious, but we divide bacon into portions and freeze them directly.

Amatriciana sauce.
Ingredients:
Bacon,Oil,Garlic, chilli, Tinned tomatoes,parley(or celery),salt(to taste).
Heat the garlic and chilli until the garlic is golden brown, add bacon and cook until white, add tomatoes, salt and parsley. Simmer for half an hour. Serve with pasta (traditionally 'bucatini')
