Hi all,

I am in the process of stocking up my freezer so I have some easy meals to cook when my 3rd baby arrives in may.

I often make shepherds pie, chilli and curry in batches to freeze. But I was wondering if anyone has any new ideas, since I am stuck in a rut with my cooking at the moment!

I need stuff I can freeze in foil trays and reheat in the oven (I have an aga). Particularly chicken dishes since I bought 5kg of chicken yesterday! But anything really.

so, other than lemon chicken and chicken curry and chicken pie, what shall I make?

is it worth roasting some of the chicken then also freezing pre cooked roasties,veg etc?yorkie puds also fare well
you mention chilli,enchilladas are great and v filling,always good with wedges
soups?
sausage and mash
casseroles
pre cooked chicken drumsticks
speckledeggy's suggestion of the goodfood site is also a good place to start
it might also be worthwhile freezing any leftovers now even if they only seem like a portion for 1 as afterall it at least gives you an extra meal in the freezer for either yourself or dh/p
all the best with the new arrival i'm a mum of 3 so i know all about this forward planning and freezer nesting!!

Fish pie a winner for me.

Lamb - Hugh FW does a north african lemon chicken dish and I convert this into a lamb dish and cooking a bit longer. I usually serve it with coucous but unsure how that would freeze. You could easily sub. rice.

Mash also freezes really well.

What about goulash? a lovely pork shoulder.

I do 'chuck it in' chicken casserole:

Brown chicken & set to one side
In casserole dish chuck in leeks (or onion), carrots & celery & saute till soft
Add chicken
Add stock to cover
Chuck in any other veg you fancy - baby corn, mushrooms, courgettes, small chopped potato etc
Pop in oven or on hob on low heat for 3+ hours
About half an hour from the end you can add some chicken gravy granules if you are chavvy like me like

It freezes & reheats well
