Fajita recipes please!

We love fajitas, but I always make them from a packet, has anyone got a good recipe?

is there any other way to make them? fry chicken, chuck on contents of packet, sour cream, onions, peppers if they float your boat...

I have made them when I thought there was a packet in the cupboard and there wasn't. I just threw a load of spices (cumin, ground coriander, chilli, paprika) and lemon/lime juice in with the chicken

STEP AWAY FROM THE PACKET!!!

I have a Good Housekeeping recipe I have been using for 10 years. Tis to die for. You need to marinade the chicken for a few hours and its obviously a fair bit more work, but by golly its worth it.

IIf still interested will fish out well worn and spattered recipe

We always stir fry chicken, add peppers and onions, then add salsa and mayonnaise, for about 30 seconds so the mayo doesn't go yucky (and grated cheese if I am feeling particuarly greedy) and then serve up in a wrap.

We use as recipe from a toddler cook book.

Coat 2 chicked breasts (cubed) in 1/4tsp cumin, 1/4tsp paprika, 1/2tsp oregano and chili to taste. Fry and set aside. Fry onion and pepper in the chicken oil, then add chicken back in to heat up. Serve with homemade guacamole, soured cream, shredded lettuce, salsa, grated cheese.

We find them just as yummy as the packets.

I love fajitas but am amazed that you all chuck everything in together in the pan esp sour cream, mayonnaise and salsa. Weve just had fajitas tonight but serve the salsa, guacamole, cream in seperate bowls which gets spooned onto the wrap, then the hot stuff. Are you meant to cook the cream and salsa?

venus, I used to serve the salsa and mayo cold, but have been cooking it in the winter. Now the weather's a bit warmer I will probably start serving it cold again, and adding some salad too

No, you don't cook the cream and salsa, you add them to the chicken once it's in the tortilla. Some chopped up coriander is good too.

Actually can't find mine but its more or less:

Marinade:

Grated zest and juice of 3 limes
Chopped half a packet of coriander
Crushed 2 cloves of garlic
2 small bird eye chillis chopped ( deseeded if you don't like it hot......we do)
A few glugs of olive oil
Salt and pepper

Cut chicken into cubes, cut red and orange peppers into chunks and onions into wedges, and toss all in marinade, cover bowl with cling film and fridge for a few hours or overnight.

Heat oil in hot pan, fry chicken until well browned with onion , remove and keep warm. Fry peppers and once blistered, put onions and chicken back in pan together with any remnants of marinade and cook for a few more minutes until chicken is totally cooked through.

Serve with homemade guac, sour cream in warm tortillas.

Mmmmmmmmmmmmmmmmmmmmmmmmmmmmm.

I have been doing this ( effectively to tast) for years it's quick and dead easy and very popular - a number of people round our way have nicked the recipe off me, or called to ask what to chuck together. Hope it helps.

lazy garlic
cumin
lime juice / zest
coriander spice
fresh coriander (i use waitrose frozen)
ground pepper
couple glugs olive oil

mix together leave on chicken breasts at least half an hour, but really till ready to cook.

drain marinade off into wok / frying pan
and either oven cook or grill chicken breasts.

use marinade in pan to fry sliced mixed peppers and onions chuck in a little sugar too whilst cooking.

cut breasts into slices and serve with usual cheese, guacamole, salsa, sour cream etc

I found the recipe;

3 chicken breasts, sliced
zest and juice of two limes
2tsp dried oregano
1/2 tsp cayenne pepper
1 tsp cinnamon
2 tbsp sugar
Basically, put it all in a bowl, mix it up and marinate for a couple of hours
I add the onions and peppers at this stage too but some people leave them until the cooking stage
Fry for 10 minutes until the sugar starts to caramalise
Serve with tortillas, sour cream, coriander, and salsa on the side

It also has a recipe to make your own tortillas, but I haven't tried that yet!
