Kitchen refit - need help with cooking for family whilst it's being done..

Ok - We are having our kitchen redone and I am going to need to feed the family in our make shift kitchen in the living room.
I have:
Microwave
Slow cooker
Rice Cooker
BBQ in the garden.

I am trying to plan food as I am going to have to be as organised as possible.
Can anyone please give me some help with meals? My DC are 3.5 and 17 months and as you can imagine consume a lot of pasta which I won't be able to cook.

So far I have:
Baked Potatoes baked beans and cheese
Rice and chicken curry
Moussaka and salad
Rice and Chilli Con Carne
Couscous and middle eastern lamb
Baked pots with spag bol.

Anyone got any bright ideas?

How long for and when?

We had a big refurb done last year and when we moved back in after 7 months renting, had to live upstairs with microwave only, wash up in bath etc. for about 7 weeks. It was grim but got through it. It was September/October so was quite warm still. This makes it easier IMO as you prob have more cold stuff when its hot anyway.

I would seriously forget about doing anything complicated, or difficult or meant to be done on the hob eg eggs/pasta. Just live without them for a bit.

I mixed it up: During the week I did a mix of stews etc I'd made ahead and frozen, then defrosted in microwave, quite a lot of deli style dinners, cold chicken drumsticks and salad etc and one night a week we ate out. At the weekend we did one BBQ and then went to my parents or DH's and scrounged lunch.

then take the time to let the dc eat other foods rather than pasta

I would do a whole chicken marinaded in the slow cooker and then serve with salad, there is another thread somewhere about salads.

Casseroles in the slow cookers - putting the sliced potatos in the bttom so it is a complete meal

scambles egg on toast microwave - have you a toaster?

rissotto in the slow cooker

sausage casserole where you put in the sausages and tip the beans etc in and cook - serve with brad or rice.

Have you considered buying a single induction hob (about £20) - I was in a similar position to you & found it really useful (you can cook pasta in it !) I think you might need something like that anyway for starting off the casseroles etc in your slow cooker.

casserole, casserole and casserole!

Do a chicken and mushroom one on night, a beef and dumpling one another night, light mediterranean vegetable one another night, chicken and red pepper one another....the list of casserole ideas is endless and at least you know your family will be getting a well balanced meal with minimal washing up afterwards!

How do I do dumplings in the slow cooker?
I can fry some things on the BBQ (it is a gas one) so starting off casseroles won't be a problem.

I will have to be super organised is all.

You do the dumplings now - then freeze them - will you have a freezer pluged in anywhere?

You can do pasta in a microwave or a rice cooker. One of them comes out quite well and the other not so good. But I can't remember which way around! LOL

I had this last year.

Chicken skewers on BBQ
casseroles of all hues and colours...

Dumplings. 8oz SR flour, 4oz suet. Mix with water to right consistency. Roll inot about 8 balls and put on top of casserole in slow cooker. Put lid back on. Takes about half an hour on high.

IwishIwerewitty - you can just chuck in the dumplings with the casserole. There's no need to do them in advance - they're only suet, water and herbs, or you can even make them just with flour and butter like this. Just mix and form into little balls or patties, however you ,like them, and then bung in with the casserole when you cook it.

Those pouches of instant rice that you cook in the microwave are good. I used loads of them when I had my kitchen done.

WHy not get a little gas hob, like the ones you can take when camping? Am sure they are not too pricey and having a hob makes life much easier I think, though I do agree you can get them used to food other than pasta!

Egg dishes are good, but again easier if you have a hob - omelette, scrambled egg, poached egg, all are good with potato waffles done in a toaster.

Salads with nice things added and simple grilled bbq fish and meat are all tasty and easy.

My DSs like tapas lunches with olives, dips, pitta, ham, cheese, sliced fresh fruit/fruit etc.

Thanks everyone - they do eat things other than pasta, honestly. It's just easy to do when things are rushed and that wouldn't be available to me.
I am borrowing a camping gas stove from someone.
I am a bit boring in my cooking though. I don't particularly enjoy it and find it a chore when I have a working kitchen.
