Pork fillet casserole, ideas please.

Open to any suggestions apart from a sweet and sour one.

Ah, I have a good Caribbean-style recipe if that appeals?

In a bowl/plastic bag season the pork with a couple of tablespoons of Caribbean all purpose seasoning, some fresh thyme and crushed garlic plus a little chopped chilli if you want more heat. Leave overnight or for a few hours in the fridge (it still tastes good even if you have no time to marinate the meat).

Soften one chopped onion, chopped spring onions, garlic, green peppers and chopped carrots in a suitable casserole dish. Add pork (you can brown the pork first if you like but I never bother). Add tinned chopped tomatoes, fresh thyme and enough stock to just cover the meat and veg (use a cube if you don't have fresh stock). Bring to boil then simmer on hob or cook slowly in oven for several hours until meat is falling apart and veg are tender.

You can experiment with the seasoning: I often add paprika and mixed spice. The all purpose seasoning mixes are pretty salty so beware of adding salt.

Serve with rice and peas or plain rice.

Pork, apple and mustard?

Fry some onions, garlic and leeks til golden. Add chopped apple. Brown slightly. Add pork and a bottle of cider. Shove in a lowish oven for an hour or so. Stir in a spoon or two of mustard (Eng, french, seeded, whatever) to your taste. Add some creme fraiche or similar, can be double cream if you're feeling naughty. Warm through.
Season with black pepper and salt. Serve with jacket spuds or mash.

No measurements - sorry- I'm a chuck it in kind of cook. I also do this with red peppers instead of apple. You can use a light stock instead of cider or a half-half mix (leaves a glass for the chef this way ). Sage is a nice addition. Can do pork sausages, chops,diced shoulder, like this too.

Sounds delish, I have no access to any all purpose seasonings, but could do paprika and possibly mixed spice.

Re: the all purpose seasoning, I like the idea of mixing my own but haven't got round to looking up a recipe. The ingredients in my shop bought one are: Salt, Paprika, Coriander, Chilli, Onion, Pepper, Garlic, Nutmeg, Pimento.

No idea on quantities though!
