Baking cakes and freezinf advice needed

I am organsing a village event and whilst I know I will have some cake donations I am scared I may get caught out so I need to make at least6 ( 8 I'd feel happier)

I canot make the day beofre as other stuff to do so I was wondering if I can bake and freeze and they would turn out OK?

I bake a lot - no problems there but have never frozen. I am thinking traybake things - toppings to be done when defrosted

Has anyone done this and what are the resulting cakes like?
am popping out now so i do appreciate your replies even if i do not respond immediatly

I made some muffins a couple of weeks ago and froze them (first time I've ever done this). I defrosted them overnight and they were fine. I gave my Mum one and after she'd eaten it I told her it had been frozen - she didn't notice any difference in taste etc.

As long as you decorate after defrosting it will be OK.

loaf cakes will freeze really well and are always popular. Tea loaf, choc, coffee and walnut are good choices.

I always freeze cakes. Freeze them un-iced and then defrost overnight before icing them.
The only ones that don't freeze as well are ones with extra moisture such as lemon drizzle cake where you pour the lemon syrup over the sponge while still hot.
Teabreads freeze very well and are ideal for village cake sales or where they are to be served up there and then due to them giving lots of slices per baked loaf (did that sentence make sense?)

We had too may cakes at my father's funeral, and had 4 or 5 left over, Chocolate Sponge, Victoria Sponge, Coffee Cake, all iced. They froze perfectly and are perfectly edible. They were all sliced before they were frozen. The only thing is that the little peaks and ridges on the icing have sunk a little, but otherwise there is no problem.

Thanks all - yes I was thinking more of loaf cakes/tray bakes - great to know you all have success with them.

Interesting to note baout the freezing of iced cakes - mmm - dare I?

I have one cooling now - will freezie 'till Monday and then asses by how long it remains in the tin my lot are fussy ...

I bake in batches and always freeze some - never had a problem (neveer tried freezing iced cakes though so can't comment on that!)

You could do a carrot cake as a traybake - freezes very well.

Unfrosted cakes and fairy cakes freeze really well, but be sure to wrap up well in foil, preferably to prevent freezer burn ie drying on the edges.
Butter cream also freezes like a dream.just store in a plastic tub
You could always make up a huge batch of basic butter and sugar and then flavour on defrosting with say, coffee, lemon, vanilla,etc

I'm not sure flapjacks freeze though.

Another top tip is to keep nuts in the freezer eg walnuts and ground almonds They keep much better than in the cupboard and I roll the top over the opened packet and put on a peg.You can use them from frozen.
Great for coffee and walnut!
