"Summery" slow cooker recipes?

I use my slow cooker loads during the winter, batch cook and freeze meals for the days that I'm in work.

The trouble is that the things I do are all quite wintery - casseroles, bolognese, tagine etc.

Does anyone have any ideas of lighter, more summery things that work well in a slow cooker?

I'm finding it hard to get much use out of my slow cooker and am desperate for recipe help.

The one meal we do regularly is pork in cider/apples with muhrooms and onion. I think that probably works well all year round and am happy to post recipe if wanted.

Tagine is moroccan. It is warmer there. Therefore tagine is not wintery.

Sorry, not much use, but most/all of those things could be enjoyable tasty meals in the summer as well as the winter.

i do curries, soups, bolognese in mine through the summer
can also just do joint of meat in there and have veg with it when you get in

Yes agree with Trills re tagine.

You could do lighter casseroles - chicken in white wine, pork in cider etc.

Any sort of pot roast that you could then serve with new potatoes and salad perhaps.

Curries are always good too.

NC - the pork/cider recipe is:

1 tbsp oil
2 tbsp butter
1 sliced oinion
2 sliced celery sticks (although I exchange this for sliced mushrooms and it works well)
1 large peeled & chopped apple
1 3/4 lbs cubed pork
2 tbsp pl flour
1/2 pt dry cider
salt & pepper
Bouquet garni sachet

Preheat cooker, fry onion/celery/apple in oil for 2/3 mins then transfer to cooker. Brown pork, mix flour/cider until blended then stir until pan with pork and bring to boil. Season well, add bouquet garni and then transfer to cooker. Cook on low for 6-10 hours.

It is really tasty.

It would be really nice if anyone else wanted to exchange something that works well for them.

Thanks for all of the replies. I'm not a salad lover which I tink is one of my big problems when it comes to preparing lighte, more summery meals!

My tagine isn't a full on traditional tagine, just something that I've concocted since having a slow cooker!

I do it like this:

About 800g stewing lamb
2 large onions, chopped
2 cans of chick peas
lots of dried apricots - a couple a big handfuls
a couple of diced tomatoes
cover with veg or chicken stock
2 teaspoons of cinamon.

I lob it all in and leave it on low all day.

Both of my ds's (4 and 1 1/2) seem to really enjoy it.

This is really useful, we just got a slow cooker but haven't experiemented with it much and a lot of the recipes in the book we were given (the whole thing was a gift) involve lots of pre-prep and various steps that aren't practical when you're hoping to "lob it all in and leave it all day"

Sybil I've made the bolognese on this link and it turned out ok. There was a wee bit too much liquid in it so I'd cut the stock or eliminate the milk next time. Could also do with a bit more seasoning/herbs than the recipe suggests.

Pulled pork...my dirty mind works overtime sometimes but it's a good name as the pork literally falls off. I simply put a pork shoulder into my slowcooker with a cup of apple juice, cook all day then add homemade or shop bought BBQ sauce which we then eat with floury baps and salad. A summer staple in my house!
