Non meat/fish recipes

so its finally hit me that my DC do not need to eat meat or fish for protein every day.

I do tend to cook separately for them as husband and I prefer spicier food a lot, so i thought a tomato/cheese pasta, veg couscous, a veggie bake, egg dish and there my mind goes blank.

Can you help me and inspire me with your recipes?

TIA

Pizza, pile with all sorts of colourful veg, one way to get them to get 5 a day with no effort
Jacket spuds with cheese/beans/coleslaw

Risotto goes down a treat with mine too. Potato/cheese/onion bake
Moussaka is well worth the effort
I have a recipe for a gorgeous courgette and feta pie that we all devour like vegetarian wolves (I don't generally eat meat but rest of family do)

Agree re: potato, cheese and onion bake - my two love that.

Risotto.

lentil soup or lentil casserole or lentil chilli or lentil bolognaise (they like lentils!).

Chickpea curry or tagine.

Tofu stir fry, or a stir fry with cashews, or omelette strips.

thanks so much for all suggestions (and keep 'em coming!).

DC1 is a fan of making the pizza with me but not so much eating it - strange child .

will give the potato, cheese and onion bake a go - i'll google a reciple unless one of you lovely ladies feels like posting yours?!

also, NNB would love the recipe for your courgette and feta pie - i know i'd love it even if DC don't!

TIA

Lentil sheperds pie
Frittata
Baked beans on wholemeal toast (seriously)
Fajitas (we use big chunks of courgette for the 'meaty' part - or use tofu)
Definately risotto
Grated vegetable soup with crusty bread
Pasta with pesto & beans
Puy lentils with fried halloumi cheese
Stuffed mushrooms
Mushroom lasagne (lots of effort but sooo worth it)

Dp makes ours. I think he boils some onions then stirs them, some butter, some milk and a load of cheese into mash and then bakes it until all golden and crispy. The girls adore it.

I like it with sauteed leeks in but the girls pull faces at that!

OK, Puy lentil recipe:

Fry finely chopped small onion and clove of garlic in olive oil
Add other finely chopped veg e.g. celery/bell pepper/mushroom (the fine chopping is because this is dish is about the lentils not the other veg so much) and fry until soft
Add washed Puy lentils (I do a cupful for 2 adults and a toddler)
Cover the lentils in water or stock
Simmer until all water has been absorbed and the lentils are soft (note Puy lentils do not disintegrate like other types do)
Meanwhile cube a block of Halloumi cheese (note I soak the Halloumi in hot water for a bit first because it is quite salty and my toddler loves it)
When the lentils are almost done start frying the halloumi in olive oil until it is browned
When lentils are cooked transfer to a serving dish and dress with a desert spoon of olive oil and one of balsamic vinegar (I take some out for the toddler before the balsamic)
Stir in the halloumi
Serve with a lovely salad and crusty bread

Enjoy!

Ooops I forgot to mention seasoning the lentils - I add pepper, mixed herbs and a bit of cayenne pepper

OhCobblers · 07/04/2010 23:08

lionstar many thanks - sounds delish! will give it a go this week.

also, i've googled potato, cheese and onion bake/pie as i need a detailed recipe with measurements, etc, and am getting so many with metric / imperial and various other differences that i'm getting confused!!

would someone be kind enough to post a detailed recipe that i can use as i think DC will love it as will DH as long as he gets meat too!!!

TIA
