what would you serve for a brunch?

I've got friends visiting from 8-11 on easter monday (don't ask...), and they want feeding, so I've said I'll do brunch, but am now thinking, what does one serve for brunch? and it has to be vegetarian too...

I was thinking bagels with cream cheese and a variety of toppings, with fresh fruit salad and yoghurt, but would that be enough?

any ideas?

How exciting!

I made the most delicious sultana buttermilk pancakes last weekend ,recipe from Sainsbury's magazine, you can serve either with crispy bacon or a lemon butter. Seriously gorgeous, fluffy and yum but very easy. Very rich though, it would be nice to do some fruit alongside, maybe a pineapple/passion fruit mix?

........another nice one I do sometimes is crushed digestives in the bottom of a small glass, topped with greek yoghurt, topped with some defrosted frozen raspberries. If they haved an especially sweet tooth, you can swirl a little rasp jam into the yoghurt.

There of course are endless egg recipes, eggs benedict esp springs to mind. Or you could go all continental and do rye bread with a mixture of thinly sliced cheeses and cornichons etc.

Fay Ripley (Family Food) does an amazing blueberry pancake recipe - serve with crispy bacon and and syrup.
Alternatively, (same book) baked ham and egg, all done in their own little pots.

Serve with fresh fruit and some croissants/ toast type stuff.

ooh, they sound yummy taffeta cat - i can't find the recipe on the sainsbury's website, so if it's easy to post, please do! the little fruit pots sound good too.
sadly meat is off the menu (tricky guests!) but

Nigella has a big Brunch section in Feast, I think it is. I can remember something like a fritata party recipe. Lots of omelettes with different flavours.

I would do a selection of pastry's (i love the cinnamon and raisen swirl things) and some croissants with varies toppings

sultana buttermilk pancakes

serves 4

225g self raising flour
1 tsp baking powder
generous pinch ground cinnamon
2 tbspn caster sugar
1 x 284ml carton buttermilk
2 large eggs
40g sultanas
butter and oil for frying
optional maple syrup for drizzling

for the lemon butter
75g soft butter
zest 1 lemon
1 tbspn soft brown sugar

Sieve flour and baking powder into large mixing bowl and stir in cinnamon,sugar and a pinch of salt. Make a well in the middle. Lightly beat buttermilk and eggs in a jug, pour into the well, then whisk using a ballooon whisk into flour until smooth. Stir sultanas in.

For lemon butter, beat ingredients together in a bowl.

Heat a tablespoon of oil and small knob of butter in a large frying pan. When sizzling, add 1 tablespoon batter for each pancake. Cook 5 or 6 at a time, spaced apart as they expand a little as they cook. As soon as bubbles appear on the surface, flip and cook the other side cooking for 4-5 mins in total. Continue to cook in batches adding more oil/butter as necessary.

Pile em high and drizzle with syrup and blobs of lemon butter.

Mmmmmmmmm..................

Frittata with roasted cherry tomatoes or similar, banana bread/muffins, fruit salad, greek yoghurt with toasted almonds and honey, nice juices...

You could always do Mimosas if they aren't driving off to make it a bit more of an occasion?!

Sounds lab a fab idea by the way!

I would do some mini quiches (muffin size) with a fruit platter. Nice coffee and fresh juice etc. Plus a chocolate cake or something sweet.
