Failing that, mince, breadcrumbs, one egg, bit of grated cheese, salt and pepper,sqwodge into walnut sized balls.

(don't have quantities, just lob it all in, adding more of stuff if it doesn't look right)

Nigella and Jamie both have good meatball recipes on their websites.

Delia's Recipe...

8 oz (225 g) minced pork
1 level dessertspoon chopped sage leaves
3½ oz (95 g) mortadella or unsmoked bacon
2 level tablespoons freshly grated Parmesan (Parmigiano Reggiano)
2 level tablespoons chopped fresh parsley leaves
3 oz (75 g) white bread without crusts, soaked in 2 tablespoons milk
1 large egg
a little nutmeg
salt and freshly milled black pepper

Just mix it all together (I use the food processor so it is quite fine) then shape into balls. Then pan fry till browned, then I drop them in the pasta sauce that we are using to keep warm/cook through.

I usually make loads and freeze some so they are ready for a quick meal.

These are nice with spaghetti and tomato sauce.

This is my easy recipe - use minced beef and or pork and or sausagemeat. Use stuffing mix instead of breadcrumbs - Sainsbo's do a nice onion, sage and lemon taste the difference one. Mix together with an egg yolk and any other flavourings you fancy - finely chopped garlic, smoked garlic, herbs, paprika etc. Shape into meatballs of your preferred size. Cook in oven.
