celeriac - what are you all making with it?

It reminds me of that Tony Harrison head in The Mighty Boosh.
Last time I made it into a sort of celeriac dauphinoise. Nobody liked it, it was a complete waste of lardy calories.
What do you wise women suggest? (Other than cancelling the box and getting off my arse and going to the shops myself)

I suggest not bothering with it.

What I just did with fennel root though may be nice:

Chop roughly and chuck in compost bin or underneath a large bush.

I boil it in milk then mash with cream and butter. I use half celeriac and half parsnips. It's nice. Not as nice as mashed tatty but more than edible and nice and light.

Celeriac and apple soup is really tasty - don't have a particular recipe I use so just google.

I have made celeriac, potato and apple soup as well, but prefer it without the potato.

moonmother · 30/03/2010 10:13

I love Celeriac.

I add it to soups, stews and mash for topping out cottage pie.

My fave is using it to make coleslaw. I can't eat cabbage as I end end with terrible stomach cramps, so I use celeriac instead.

Everyone here prefers it to proper cabbage coleslaw.

neolara · 30/03/2010 10:15

I put it in stock.

Celeriac and apple soup sounds lovely actually. Will even try it!

Do you like it? We all agreed here that it must have been a bad recipe - mixed with other root veg, mashed and then made into little cakes to fry.

DomesticG0ddess · 30/03/2010 16:27

Definitely as soup. Also grated raw or sliced thinly into salads. Mixed with potato in mash, with some goats cheese.

There's a Ottolenghi (sp?) recipe with celeriac and sweet potato mash with lentils and red wine stewed shallots that I'm making this week to use up the bloody celeriac. Rather nice actually, though the celeriac doesn't add much.

I made it into soup, with carrots. It was ok. But I don't really like those smoothly blended soups. They are so... 80s.

I also made some into a little salad, grated, with carrot, red onion and vinaigrette. That was really nice. But I am not going to make it for more people than me because I hate grating root vegetables.

Clerey soup is lovely. Highly superior to celery coup.

snorkie · 30/03/2010 18:35

I have a lovely soup recipe, but I also roast it, use it in casseroles, and make celeriac mash.

taffetacat · 30/03/2010 21:51

I love the smell of celeriac. I buy it just to sniff it daily. I also sniff them in the shops.

Have never come across a recipe that does its smell justice, but am noting the celeriac coleslaw. IMO, its better raw. It doesn't lose its smell then.

......and we call it Oodkind here. We are Doctor Who geeks.

< very excited about Saturday....>

Celeriac remoulade - coleslaw basically, but god it's gorgeous.

Celeriac Remoulade and Carrotte Rapee in those little plastic boxes are up amongst the highlights of any trip to France for me [saddo].

moonmother · 31/03/2010 07:51

SuziKettles thank you for posting that recipe- I came up with the idea of celeriac in coleslaw after a trip to France and seeing Remoulade and Rapee.

The only problem I have is it's very hard to buy Celeriac around here, I usually have to ask my Mum to pick one up for me from the Tesco's near her.

chopstheduck · 31/03/2010 08:14

i make chips with it. Cut it into chips, drop into boiling water for 3 mins, then lay on a baking tray, drizzle with olive oil and a little curry powder - delicious!

salads are nice too.
