Easy supper ideas for a 2 year old

DD is in nursery full time, 5 days a week, so eats 3 meals there a day. Breakfast, lunch and tea (which is more of a snack) and is generally hungry when she gets home at about 5:45pm. Because it is fairly close to bath and bed time, we don't have longer than 15-20 minutes to prepare something, so on the whole it has to be a quick meal to prepare.

I really need some ideas, as although the 3 meals she gets at nursery are healthy and nutritious, I don't feel the meals we give her are!

Currently it's:
pasta & pesto/fresh tomato sauce,
fish fingers and veg,
chicken dippers and veg,
cheese, ham, baby toms and fruit
scrambled eggs and baked beans

I have tried making a few dishes to freeze, i.e. lasagne, cottage pie, fish pie, but have found she is just not interested in eating that sort of meal for supper, and it all goes to waste, which has made me give up on that idea.

If anyone has any suggestions, they would be most welcome!

what about sandwiches?

mini homemade pizzas?

baked potato with avrious fillings?

egg in various forms

cheese on toast with tomatoes on top

couscous and veg

not very exciting but are quick!

Couscous with olives, cut up peppers, tomatoes, cucumber and chick peas or cubes of ham

Rice with entil dahl and boiled eggs

Fried eggs, baked beans and toast

kedgeree

fish pie

Quishe and salad or baked beans

Easy quick stable in my house is a stir fty (mixed veg, sometimes chicken or beef too) and noodles.

How about cold open tarts, you can make the pastry cases in advance and fill them with literally any coldthing, cherry tomatoes and feta cheese and olives, tuna and sweetcorn, chopped up cooked veg and cold meats, cottage cheese, chunks of cheese and ham and cucumber, peas and ham, smoked salmon and cream cheese, tomato sauce and mozarella and peppers, even little cut up frankfurters can be part of it.
