Good Looking Biscuits

Hi

Does anyone have a recipe that meets the following requirements?

Quick
Easy
Cheap and thus with a high yield for not much input!

That gives you nice uniform looking biscuits that look attractive to as many people as possible.

I have to provide squash and biscuits for an event and don't want to buy a box of biscuits, would rather they are home made. I do bake, just not biscuits as a rule.

TIA

I have a chocolate chip cookie recipe. It doesn't generate uniform biccies but they do go down well. The actually mixture doesn't take long to put together once you have measured out the ingredients.

Choc Chip Cookies
300g plain flour
1/2 tspn baking powder
1 tspn salt
170g unsalted butter
215g light brown sugar
120g granulated sugar
1 tblspn vanilla extract
1 large egg and 1 egg yolk
200g chocolate chips

Melt butter and allow to cool slightly.
Sift flour, salt and baking powder.
Stir together melted butter, sugar and vanilla.
Add egg and egg yolk. Beat well.
Stir in all the dry ingredients then fold into choc chips. They will all go in even if it doesn't look like it.
Cover with cling film and chill for at least half an hour. I find it helps at this stage to make it into a sausage shape about the diameter of a Mr Sheen can.
When I take it out of the fridge I chop the sausage into bits about an inch high. They look like little hockey pucks.

Bake at Gas Mark 5/190 degrees for 10-12 mins or until the edges are golden.

I find these are very easy to make and everyone loves them. This recipe tends to make about 12 largish biscuits. If you want more cookies then decrease the size of your 'hockey puck'.

Alternatively, Nigella's Vanilla Shortbread recipe is quite good but I tend to find that they crumble rather too easily and I always break a few getting them out of the tin.

Any recipes that require you to roll out a sausage shape, then chill and then slice will provide uniform biscuits. Make sure to chill for at least 30 mins though.

Yummy Biscuits from the Hairy Bikers' Family Cookbook turn out looking really good, I think there is a mistake in the book though.

This recipe works:

100g butter
100g caster sugar
200g SR flour
1tbsp golden syrup

Oven 190degC

cream butter and sugar until light and fluffy, add flour and syrup and mix to a soft dough (I used magimix for this). Roll into small balls (recipe says makes 18, I got 24) and place on greased baking sheets with room to spread. Press down slightly on each one. Bake for 6-10 mins until golden, transfer to wire rack once cooled slightly.

Mine turned out looking similar to Fox's crunch creams (but tasting miles better of course). You could easily double or triple the recipe.

Glad it went well, hobbgoblin. I'm tempted to make those crunch cream type biscuits now but if I do then I can't make the extra jammy victoria sponge that I promised DP. Decisions, decisions.

Glad to be of assistance hobbgoblin.

Ant3nna - they are so easy you could do both and then your DP will love you even more.
