Help me plan my meals for the next few weeks - money very tight

money very tight over next couple of months so need to chop down on food bill - however we are healthy eating/dieting so not loads of carbs - how on earth are we going to do this!

Root veg - tis the only way...roasted, made into soups, made into mash...casseroles...all sorts...

oh and lots of mince as per usual.

and watering down fruit juices.

I'd do high carb healthy eating - like the Slimming World green plan. Lots of rice, pasta, potatoes, unlimited fruit/veg. Minimal protein.

Porridge
Beans on toast
Jacket potatoes
Stews with lots of lentils and beans to bulk (and provide protein)
Make a bit extra with stews for a second meal (which reduces cooking costs)
Add a couple of tins of beans/chopped toms/tinned carrots to all meals.
Shop in markets/supermarkets at end of day to get marked down stuff - cook promptly and freeze.
Soup (add rice/pasta to bulk) and bread.

Healthy eating is loads of carbs, imo. They fill you up with long-term energy, whereas protein and fat don't.

I'd go with FourArms suggestions. Lots of veg is carbs. And pulses provide protein. Whizz the beans in a blender if the dc's pick them out of soup.

You can't do low-carb on the cheap because most source of protein... meat, dairy, fish, eggs....are quite expensive. Cheaper proteins in the form of beans, lentils and chickpeas is also high carb.

So forgetting low-carb..... go with plenty of seasonal root/leafy veggies, seasonal fruit, wholegrains (brown rice, wholemeal bread, wholewheat pasta, porridge oats), pulses, eggs etc., livened up with plenty of herbs, spices and garlic and a little oil for cooking. Use meat, fish and cheese sparingly as a flavouring rather than as foods in their own right.

If you're trying to lose weight simply trim the portions of the high-cal foods and bulk up on the low-cal veggies instead.

ummm Ive always doen the opposite - decent amount of protein, vast amounts of veg, salad and very low carbs...the weight drops off. As soon as I do the opposite I become at a standstill.

I think I need to do a plan and bulk out on more vegs - I love brown rice

boil potatoes with a chopped onion, drain and mash with butter salt and pepper, add a tin of chopped up corned beef and mash through again, if you have no corned beef add grated cheese instead makes a smahing meal and is very filling especially with a plate of bread and butter yum!
