Left over slow roast pork

Hi there. Sunday dinner yesterday was an amazing (new recipe from Jamie) slow roast shoulder of pork in cider and cinnamon (highly recommended). Got a bit carried away and cooked it for an age in the cool Aga over - and it was melt in the mouth soft.

But we only ate half of it. So now I have a big lump of very tender, falling into kind of strips, pork sitting in the fridge.

Does anyone have any ideas what to do with it please?

Today we are having meat-free Monday - but would like to eat tomorrow.

Roast pork sandwiches on fresh white bread with a bit of butter with apple sauce.

There are lots of other things you can do but that is by far my favourite.

I do a slow roast pork recipe from Jamie but it is cooked with lots of peppers and tomatoes and it is gorgeous.

When we have pork leftover, I make a simple goulash, like this and add the pork.

We also had slow roast pork yesterday and I'm frying some peppers and onions with it, some cajun seasoning and having with tortilla wraps

Pork is good in noodle soup - you can coat it in a little honey and soy and fry it first if you like.

I made a very nice stir fry with noodles, pkt of stir fry veg and leftover roast pork a couple of Mondays ago.

Similar to northender, but with onions, chilli, spices and rice for tasty burritos.

You lot are brilliant. I never would have thought of wraps or noodle soup. In fact I'm doing a kinda Wagamamma soupy thing this week - so will put the pork in that! Fab. Cheers.
