Cake for baby with MANY allergies/intolerances.

Ok, so DD is one in a few weeks and we're inviting a few friends for a playdate. One of them has to avoid many foods, and I'm looking for a recipe for a cake that I can make so she can also partake.

The problem foods are preservatives, dairy, eggs, bananas, sugar - natural sugars are fine (I guess by this mum means unprocessed sugars, i.e. in fruit).

She can eat spelt flour, but not sure if this cooks the same as normal flour?

HELP! Any good recipes out there?

Thanks in advance.

why dont you ask the mum to bring something suitable for this child (and others) who is allergic to all the above?

She (mum) will know exactly what to buy or bake as she is used to this sort of thing.

Thanks for the suggestion, but I was hoping to be able to provide a birthday cake which they could all enjoy, as the mum is hosting the party (as the child's also allergic to cats which we have one of).

Mum doesn't have a clue about baking cakes for her yet as she's only been on this restricted diet for a few weeks.

Not sure about the spelt, would probably be OK but a bit heavy so increase the raising agent. Carrot cake could work, and replace any additional sugar with grated apple (carrots are naturally sweet too), and/or raisins. You can get egg substitute in powdered form, I've not used, but know a friend who does do cakes with it.

My dd is allergic to dairy and egg and this Carrot, apple and raisin cake is lovely. It does have light brown muscovado sugar in it - you could ask if that is ok. If not, maybe you could substitute with something else

Thanks PFV. I'll run that past her mum and see what she says. I have a new-found respect for everyone trying to cope with such restricted diets!
