Malaysian recipe that can be made by DS(10)

May have drawn the short straw - or, who knows, it might be the start of a great career. DS (10), with normal attention span of a reasonably diligent gnat, has been allocated to learn to cook and then cook and serve a main dish from Malaysia for an international food evening. He has to be able to cook it unaided on he night. I could help if it were from loads of other countries, but this has me foxed. Can anyone help, please?

Malaysian food can be Malaysian Chinese food, Malaysian Indian food, Malaysian Malay food, Malaysian European (Portugese/Dutch/British) etc etc. It is the original fusion cuisine. Which probably means anything would do... But people mostly mean nonya/peranakan food, I think, when they say Malaysian food. Things with coconut milk/lemon grass/tamarind etc. Try Googling Nonya cuisine or Peranakan cuisine.

Nonya chicken curry is to die for (but probably a bit involved) .... >

How long will he have to cook it on the night? And what sort of facilities?

My DH is Indian Malaysian and he has a fab recipe for ribs that he got from his Chinese Malaysian nanny. It's reasonably straightforward in the sense that you just mix the marinade up, leave the ribs in the marinade for a few hours and then bung in the oven. It may be considered too chinese by the school though.

I know a fab website that sells packaged spice mixes for various Malaysian dishes. I imagine that a pre-mix isn't what is wanted though.

I know! Cook a nasi lemak - just cook rice in coconut milk, serve with hardboiled eggs, salted peanuts, cucumber and a sambal which I'm sure you can cheat and cook ahead or use out of a jar ...

Should look like this. Classic breakfast. Cholesterol up at the start of the day!

By the way I did the Waitrose sambal recipe with roasted ingredients rather than deep-fried and it was still very nice. Even did one without the chilli and it was still nice.

Thank you, all. I was feeling a bit at a loss and now I'm seriously hungry! He'll have access to one or two rings or an oven and max of a couple of hours. Have to go out for the rest of the day now - but as of tomorrow he can get practising. May have to try several ideas before we choose...
