I've just bought a freezer to fill with homecooked things only.

What sort of things should I put in?

So far i've decided

pizza dough
hash
stew
pasta sauces

How do I go about freezing rice (I want to do a curry and rice so that DH can take it to work)

Do home-made pies freeze well?

Does anyone have any ideas?

OK, starting with the things you've listed:

I tend to make the pizza bases and part bake them. Is this what you had in mind? Then I get them out, they defrost in no time and I then stick the toppings on and bake them.

Stews, casseroles, home made soups, curries, chillis... all freeze beautifully.

If I'm going to freeze rice, I cook it and then spread it out on a large plate and put it in a cold place (usually my utility room aka the end of the garage) so it cools rapidly. Then I put it in a plastic tub with a lid and freeze it. You do need to cool it very quickly and then when using it, microwave the bejaysus out of it though to make sure it's piping hot to reduce the risk of food poisoning.

I make a home made pie but put it in the freezer in its unbaked state. Then I get it out the day I want to use it and let it defrost through the day before baking it.

Fairy cakes, tea loaf, banana bread, muffins, yorkshire puddings; all these freeze well.

Making your own fishcakes and freezing them is also a good idea, but you need to open freeze them first and then bag them up so they don't all clump together.

Hope this helps

To freeze rice just cool it really quickly by putting it into a seive and running it under cold water until it is cold, then freeze it.

Pues can be frozen, yes. I'd cook them and then freeze then if we're talking about pastry pies like cornish pasties or something.

Other good pies to freeze are fish pie and shepherd's pie with potato toppig, and chicken pie made like fish pie. Yum.

Pizza bases I also part bake, then when cold wrap in cling film and stack on top of each other in freezer. I do this with home made pita bread and naan bread too. Home made bread I just cook and then freeze.

Almost anything can be frozen, certainly all sauces, pasta sauces, curries, casseroles, bolognese, cheese sauce chilli con carne etc

Lasagne is another good one to batch cook and freeze.

I make very concentrated tomato sauce for pizzas, os it is basically condensed, by cooking off most of the water over a slow heat, then freeze it in ice cube trays, then I take one cube per pizza, defrost and add some water to make it less condenced again.

Noodles don't freeze well, I learnt by experience, but who needs to freeze noodles?

Couscous freezes well.
