Refridgerating cakes

My options are

to make a Victoria sponge cake with jam and cream in the middle, topped with ready rolled icing and decorated with icing pens or

an apricot cake, also topped with the ready rolled icing and decorated with icing pens

the birthday is not until Friday but it would be useful to make it today, though not crucial. DH keeps going on about making it today.

I would think the apricot version would keep best.

I agree, but would it still need to go in the fridge because of the icing?

I am not making it tonight now anyway as I am too stressed after my guinea pig's escapades.

fab store your iced cake in a tin/tupperware as is til you need it
hope all's well with your guinea pig..!

Thanks for the tin tip. I am never sure whether a cake needs storing in the fridge if it has icing or butter cream.

Don't under any circumstances put a cake covered with ready rolled icing in the fridge! It will sweat and go VERY peculiar .

The same will happen if you put it in a tupperware box. The icing needs to be in the air, the only reason to cover it is to stop dust, etc getting on it.

Buttercream doesn't need to be in the fridge because the sugar preserves the butter.

If the entire cake in covered in icing of some sort with no actual cake exposed to the air then you can just put it on a plate and cover it with a cardboard box or tuck a bit of greaseproof over it then leave it somewhere out of the way.

fab olihan is completely right re: the icing but if it's an over night job as you said then a night under covers won't damage it but would use a buttercream as opp. to cream filling

I am making a fig and apple cake today and dh will do the icing tonight ready for ds1's birthday tomorrow.

I have a fly cover thingy, will the cake be okay under that overnight with a tea towel over the top so ds1 can't see it?
