OK I'm going to be a bit evangelical here.
About 9 months ago dh brought a box of eggs home which were a gift from one of his colleagues who keeps chickens.
They were a complete revelation - enormous dark yellow yolks, and flavour which made us realise we had been eating crap eggs all our lives. It was like the difference between instant coffee and real coffee. I made a batch of perfectly normal fairy cakes for dd's birthday party and all the grown-ups were raving about how nice they were, simply because of the eggs (I am not that great at baking.)

We had always bought free-range/organic eggs where possible, but honestly, the ones you buy in supermarkets are nothing like these were.

In the end I had to get my own hens, just to ensure our supply

It bothers me that there are so many people going through life not knowing how nice eggs can be. Please, if you have never had Really Nice Eggs, find a neighbour who keeps chickens, or stop at one of those places by the road where a backyard chicken keeper sells their eggs from their gate, and get some that are only a few days old and just see how nice they are [deranged evangelical smile]

I did try to find the thread, Jareth, but the search facility must be broken because I didn't get any hits. (I know it's broken, rather than just being that she didn't actually use the word 'eggs', because I searched under 'Xenia' and 'money' to check and that didn't come up with anything either.)

If Xenia lived near me I would happily give her a box of my wonderful eggs, just to convert her

I get fresh eggs from a friend's chickens every week, and I agree,the difference in taste and colour is amazing. Not had a baking frenzy since getting the supply, so look forward to baking with them.

Yes I know about Xenia and her cheap chickens and cheap eggs, just to be bloody minded. It really saddens me how many battery eggs I must be eating but short of making absolutely everything from scratch there's really no way around that one.

[steadfastly trying to ignore the posts about Xenia because it makes me when people just don't seem to care about another animal's welfare.]

we made an omelette from home-"made" eggs last night and i spent about 5 minutes commenting and "wow"ing over how orange the yolks were! i was shocked, i don't recall them being quite so orange! their dad must have been feeding them loads and loads of cabbages! (just goes to show, kids, eating greens is good for you!)

I was really shocked when I saw a photo of my chicken-friend (ie dh's colleague who got me into this whole chicken lark)'s ex-batts when she first got them.
They look like some kind of weird alien - staring eyes because they're not used to the light, skinny featherless necks.... The thought of eating eggs from birds in that state makes me feel ill, even aside from the cruelty.

I think that it is grass that makes all the difference to eggs - my ladies are fed on kitchen scraps, layers pellets and leftover bread .... their favourite is spagetti (I think they think they are worms...) as it starts a frenzy.

Genuinely I cannot understand why anyone would buy a non free range egg - they are vile tasting for a start and very few of us are genuinely poor enough to justify buying them. My middle DD went out his morning and got the eggs in and had a double yolker fried up with some toast and red sauce. It was so fresh and beautiful, I always feel so proud when I see my kids eat something like that because I absolutely know that it is the very best they could be eating.

I really would urge anyone with a little bit of space to get a couple of chooks, they really are charmers in their own little way and give a lot back for so little input - much more fun than rabbits and the like.

I have really nice eggs too. (is that too benny hill?). My cream legbar has finally come into lay and my other posh bird, a cochin, is popping out her perfectly formed little offerings regularly. My hybrids just get on with it.
I also have an intolerance to eggs cooked on their own, but seem to be ok with things like cakes My poor husband is very intolerant to them, but ok with things baked unless he has a lot of it. The children wolf the eggs down.
My friends really enjoy having the use of our 'eggstras' and are convinced that their baking is greatly improved by it.

I also arrange my pretty pastel shades of different eggs into patterns in my egg basket.

my friend keeps chickens and ducks and gave us some eggs and i totally agree.... the taste was completely differant to any supermarket eggs i'd ever bought.

interestingly, recently i was baking a cake and had two eggs from a local superamrket and two from tesco... all free range. when i broke them all in the bowl the differance between the ones from the local supermarket and tesco was insane... the tesco ones had lovely dark yellow yolks and looked lovely whereas the others had tiny pale yolks and looked ill in comparison.

so even if you can't get eggs from someone who keeps chickens it pays to try eggs from various sources as the differance can be huge!
