You know those lakeland/nordicware cake tins? does the cake need to be quite heavy to bring out all the detail?

I made DS a pirate ship one for his birthday (see pics on profile). It didn't taste very nice though as it was so heavy.

I did use egg replacer instead of eggs as he is allergic to dairy, but i use that in normal cakes and it's usually fine.

I'm making it again next weekend and was thinking of tryig a different recipe, but wondered if it needed to be quite solid to bring out the detail?

I've got the dinosaur and train ones, and they come out nicely with a normal equal weight of egg/flour/sugar/butter cake. But, they don't come out as well with gf cake mix for some reason.

Did you use cake release ?

I did use cake release. The detail came out pretty well, it was just that the cake was so solid it was a bit inedible.

It was actually the recipe that came with the train tin that i used as the pirate ship one had peanut butter in it.

I might do a trial run today with just an ordinary sponge mix. It can be a bit crumbly using the egg replacer though.

Are all nuts a problem ? I find making an almond madeira can make a more reliable cake with variations than plain sponge.

I lost my train recipe, so I just weigh the eggs then do equal parts.

Hace you thought about 'phoning Nordicware UK to ask them? It really would be the easiest way.

Aaagh, just got my trial run cake out of the oven, the whole thing had sunk and I managed to knock the tim off the worksurface so have cake all over the place!!! not very successful, will have to get more margarine and try again.

he's never had any nuts, but has just grown out of allergies to chickpeas and sesame so not keen on giving him nuts yet.
