Need to stop feeding my family so much meat. What would you recommend as a kids friendly veggie meal for the whole family.

DS loves lasagne. Either just veggie sauce, or with Quorn mince, or with a veggie and bean sauce.

Any kind of pasta actually - tomato sauce, cheese sauce etc etc.

We all love pea and paneer curry. Or a Thai style curry with tofu.

Cous cous with roasted vegetables is popular too.

Lentil shepherds pie is good for kids

Or mash and cheese pie (mmm comfort food)

Some of the veggie sausages are nice for a sausages and mash type meal - we use quorn bramly apple ones

Lentil & chickpea stew with quinoa oddly enough gets eaten with gusto

Fajitas always good

Spag bol with veggie mince (Real Eats one is good), lots of veg in too and some sun dried tomatoes - have served this to many a meat eater with never a murmer of complaint

Quick pasta dishes work well to e.g chuck a tin of kidney or canelloni beans over cooked pasta with a tub of creme fraiche and a couple of spoons of pesto (roast aubergine goes well) topped with parmesan

hanaflower My dad was Pakistani but my son doesn't like spicy food I have always eaten mild curry & can never be bothered to make it because for all that fussy it's never as good as my Mum's. Mum has promised we are going to re train his taste buds now.
I think you are right for health veg food its got to be asian. I love chickpeas & spinach so we will work on that one.
Very interested in the lentil shepherds pie How is that made?
Mash & cheese pie really not sure that's very health but I didn't ask for health food did I ha!ha! Not keen on fake meat
Yep! pasta easy not sure i have ever had beans with pasta but I'll give your idea a go.

Tonight we are having leek and potato soup with croutons followed by tart with apple struper underneath and bakewell-type top (made it up as I went along).

I started a thread about Veggie Shepherd's Pie a couple of weeks ago and got some good recipes.

Haven't actually tried any out yet though...

Yep! I make lots of soup too butternut squash & chickpea, minetrone and lentil. But I think I have souped the family out this winter. I love roast mediterranean veg and of course ratatouille. I'm going to look at the veggie pie thread. ta

Tonight we are having barley and vegetable soup with tiger bread.

Yesterday we had spring vege risotto.

Tomorrow dd1 is cooking a potato and cashew nut curry.

On Thursday we're having spaghetti with a homemade suace of some sort, made by dp.

Potato and cheese bake is v popular here too and it's no worse than a baked potato with cheese on in terms of health. We have lots of veggies with it too.

Chickpea tagine is good or a picky meal with homemade hoummus, pitta, salad etc. Falafel good too but I am yet to find a decent recipe.

How do you make chickpea tagine? Sounds good.

I like veggie chilli with tortilla wraps, yoghurt, cheese, salsa etc. Rice is good too though.

It depends what I've got etc. usually I use a Madhur J recipe, in which you layer loads of veggies up in a dish with garlic and spices then pur over stock mixed with more spice and a bit of tomato puree and cook until they go soft. i add chickpeas near the end.

Last time I made a Morroccan-ish inspired thing by:
Frying onion and garlic. Adding some carrots sliced on a slant, some potatoes, various other vege. Then adding ginger, paprika, cinammon, bit of chilli and a spoonful of honey plus a tub of passata and some stock. Cooked for a while then added drained chickpeas and some chopped red pepper, cooked a bit more and added loads of fresh herbs. Ate with cous cous. You can add dried apricots etc but I don't like them in savoury food.

we have it with salad and bread

or aubergine polpette with spagetti and tomatoe sauce.

I am not veggie, I just don't eat meat as I don't like it. I do eat fish though.

Tonight I am having a sausage and bean hotpot. Although DD and DH hav proper sausages tonight in theirs.

Last night we all had spinach and ricotta cannelloni - was a ww recipe and very nice too.

Tomorrow is a fish pie.

Thursday is a roasted vegetable risotto for all.

We eat a few veggie meals to make it easier for me.
