How do I do this without poisoning my family?

it's more to do with how soon it was frozen, as no amount of heating will destroy Bacillus spores (that cause food poisoning from reheated rice)

It is not recommended TheFosa is right, from my experience in catering re food for planes it was always defrosted and then heated till piping hot covered in an oven we used food thermometers to check it was above 75 degrees. Hope that helps

as long as it wasnt sitting at room temperature for any length of time before it was frozen then it should be fine.

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem ? it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's steaming hot all the way through, and avoid reheating more than once.

The leftover rice was spread out on a plate and cooled as soon as it was cooked. Then it was frozen (since Sunday).

I'm going to give it a go, but just microwave the life out of it. Appetising, no?

It eill be fine if you cooled it that quickly.

Just make sure it is piping hot.

My leftover rice was in the freezer within an hour of cooking, so will I be OK to microwave it then chuck it into the sort-of-stir-fry I'm doing tonight?

i'd be inclined to cover it and hit it thru in the oven rather than nuking it
