Erm mine are quite nice? I cut quite chunky, do them with rapeseed oil, sprinkle with paprika or cayenne pepper and black pepper. Hot oven, don't turn them too soon so they get a nice crusty finish. Voila.

Use baking potatoes.

Chop them up into approx 10 wedges per spud.

Drizzle in a bit of olive oil, a lot (more than you would think) of maldon salt, and I always throw a lot of paprika on mine. Mis it all up so all potatoes are coated.

I hot oven (180 degs C with fan) as soggy wedges are vile.

About 20-30 mins depending on size of spuds.

toss the wedges in olive oil and salt, stick them in the oven for 30-40 mins. I leave pepper etc out and reduce the salt if kids are eating them.

I crumble a veg stock cube over mine, drizzle with oil and cook in a hot oven

Mine are yummy. Scrub and pat dry potatoes. Cut into wedges. Put them in a large baggie or bowl and toss in a little oil. Separately combine salt, pepper, paprika, onion granules and garlic granules and then toss into potatoes til reasonably well coated. Bake 45 minutes in pre-heated 200C oven. For a different flavour, instead of onion and garlic, use cajun seasoning.

Part boil, for about 10 minutes, then toss in oil, salt, pepper and herbs/garlic (if you fancy it). Cook for 40 mins.

my other half does them the way gordon ramsey did on his cook along, its some thing like

use red potato

cut into wedges and boil for about 5 mins. warm a tray up in the oven and drain potato. toss with chilli flakes ,salt pepper and walnut oil. throw ont he tray and cook at 200 for about 30 mins

Sounds like you've got some great recipes already. I've had a look round for you and thought this spicy wedges recipe might be of interest. I rustled it up last night and it went down a storm with DS and his friends!

You will need: 2 baking potatoes, 30ml oil, 1teasp ground all spice, 1teasp ground corriander, 2 cloves crushed garlic, 3 teasp paprika...

Preheat the oven 200 degrees.
Slice the potatoes into wedges leaving the skin on, and part boil for 8-10 mins.
Meanwhile mix the oil, garlic and spices in a roasting tin.
Add the potatoes and shake well coating them thoroughly.
Roast for 20 mins.
Perfect everytime.

Its a monumental pita but I have to say, hand on heart, that they are better for parboiling or steaming for 5 minutes before they go in the oven. It takes away that raw potato taste.

I've never parboiled my wedges and they never have a raw potato taste. Just cut them into even chunks, toss in olive oil/pepper/salt/paprika, bung in hot oven till cooked. I sometimes add crushed coriander and chilli flakes too.

God damn it, I'm hungry now.
