Carb free veggie meals?

I wonder if anyone can help

I have a friend who's dropping by on Wednesday evening to see us.

I asked if he wanted to eat with us.

The only thing is, my family are veggie (no meat, poultry or fish), and this friend eats a carb-free diet.

Most things I cook usually involve carbs. Can anyone advise something that would be carb-free and veggie yet a satisfying meal?

Tofu and veg stir fry?
Veg and bean casserole?
Big salad with chickpeas and grilled halloumi?

meant to add that you could always cook sweet potato in the curry and omit that when you dish up your friends meal.

omlette is the go-to low carb meal - when I was low-carbing I had a 3 egg omlette EVERY morning... It's the low-carb equivalent of the only veggie meal on a menu being vegetarian lasagne

Beans and chickpeas are quite carby though. If not an omelette or veg frittata (my favourites are asparagus; garlic mushroom and cheddar; or butternut squash and feta), I'd second the veg curry option, with butternut squash, spinach and mushrooms, and cauliflower on the side grated and fried, in place of the rice.

V. big cheesey mushroom omelette with chunky garlicky ratatouille, and a huge salad!

Or veg curry, or tofu stir-fry with lots of nuts.

Or aubergine / courgette parmigiana, with smoked mozzarella: layered fried aubergines and courgettes, interleaved with thick tomato and basil sauce and smoked mozzarella (called scamorza, available in Carluccio's or in Italian delis) or normal if that's all you can find. Once it's assembled bake it in the oven and serve with salad and balsamic and foccaccia for anyone who wants it?

Gah! Completely forgot I had started this thread, so didn't come back to check it yesterday. Failure to post back before now is therefore due to scattiness rather than rudeness!!

Thanks very much lovely people! That's given me lots of ideas to consider

I think I might go with the aubergine and mozzarella option this time, and use the other ideas as a bank of recipes for when he comes round again!!

Had some veggie friends around for dinner and did a stuffed butternut squash recipe I found online, filled with blue cheese, walnuts and a drizzle of honey. Went down a treat! A x

Oh and in reply to questions about making a veggie omlette more exciting, how about making it spanish style. Add some potatoes, onions, peppers, tomotoes and make in a deep frying pan. A x
