Veggie curry recipe without tomato anyone?

We've got a glut of veggies & planned to make a curry for dinner but all the recipes I know require tomato which my youngest son can't eat - has anyone got a recipe or any ideas what I could use to make the base sauce?

I'm using onion, green beans, butternut squash, mushroom, cauliflower and potato plus asparagus & aubergine which I'm still undecided about (would they work in curry?) then I and have well stocked store cupboard of herbs, spices & condiments.

Any thoughts?

I would use a tin of coconut milk mixed with a bit of stock.

Or just have the vegetables with the curry spices - once they have been cooked long enough they will be perfect in consistency or you could puree some of the cooked cauliflower to add more of a creamy texture.

Could use something like THIS but leave out the chopped up tomatoes.

You could also use a red or green thai paste and then use coconut milk - like THIS one.

Onions blitzed in a blender are a good base.. then you could add some lentils to thicken it.

Well I didn't follow any of the recipes but did use the suggestion of blitzed onions as a base tand just cooking the veggies in the spices (turmeric, paprika, ground ginger chilli, cloves & cardamon pods) adding a little water to stop it sticking then once it was all cooked I used about half a tin of coconut milk, little natural yogurt & some coriander. Must say it was bloody lovely so thanks for all the tips
