Trying to use up all the random jars lurking at the back of my storecupboard, and have found copious amounts of ginger. I have ground ginger, stem ginger and a ginger preserve. So what do I do with it all?

Ginger biscuits? I'm sure there's a recipe somewhere (and then smoosh ginger biscuits up to make lemon & ginger cheesecake with ginger syrup). MMMmmmmmmmmmmmmmmmmm

Oops, forgot to mention the half kilo frozen of grated ginger I also have that was earmarked to go into a curry, so already had that base covered!

Liking the idea of cheesecake, will see what DH says to that.

Keep the ideas coming, I have serious amounts of ginger to consume!

I would start with the stem ginger - eat it straight out of the jar.

make flapjacks with the ground ginger. honey and ginger makes a nice marinade for chicken or beef. and there is always ginger tea. I would also think that you could boil it up with sugar and water to make a syrup and add it to sapkling water for gingerbeer?

Also, maybe ginger preserve would make a nice glaze for gammon, though you might want to ignore that one as I am pregnant at the mo and would probably stir in some olives for good measure!

Grate the prseved ginger into steam pudding mix.

Grate or chop into parkin or gingerbread (the cake not the men)

Although Seville Oranges are gone from the shops, you can still use other oranges (like Mandarins - probably also hard to find) and make Orange & Ginger Marmalade. It doesn't taste very "gingery" but just gives it a subtle tang.
I have never done it, and it may not work, but you could try Ginger Gin (with Ginger rather than Sloes). It could be interesting. The other drink option could be Ginger Beer.

Ginger goes very well with rhubarb so if you like rhubarb you could make a rhubarb and ginger crumble.

Melt dark chocolate and pour over the stem ginger on greaseproof paper and leave to set for yummy chocolate gingers

grated ginger - add to a stir fry, make curries, biscuits

if you have any ground ginger left over and have a problem with cats in your garden, you can use it as a deterrent by sprinkling on your lawn

Well the good news is that DH told me last night that FIL is coming over in a couple of weeks and supposedly he really likes all ginger based products! Now I'm hoping this is true and not some random thing that DH made up as it's never been mentioned ever in all the years I've known him. Either way he's getting lemon and ginger cheesecake, ginger cake and a steamed ginger pudding with custard over the course of the weekend! Maybe I could even find time to do a lovely ginger glazed gammon...

try delias ginger cake - it has preserved, fresh and ground ginger - all bases covered and it's yummy! here
