Ok, ideas for easy veggies stuff that the kids will eat... onepot stews etc... pls!!!

You know when you kind of forget what else you can cook because you stick to the same few things alot?!

What kind of one-pot stews things can I make that the boys (4 and 6) will actually eat?!ds2 loves soup, ds1 is the fussiest child alive.
I've been making lots of sausage casseroles etc, with quorn, but they really pick out all the bits they dont like. EG ds1 only eats the sausages!!

I'm in this apathy stage regarding cooking at the moment!

Sweetcorn fritters - we still have these often

Savoury and sweet pancakes

Drop scones

Thick soups with variety of veg and pulses, we called it Grubble

Quorn bolognaise

Chili with veggie mince and kidney beans

Lots of eggy things

Cheese and lentil loaf

veggie rissoles/burgers

Pasta with a veg such as cauli/broccoli + cheese sauce

Mild veg curries

prob not a lot of originality here but hope it helps!

we're veggie and I eat separately from the dcs with dh most of the time. The dcs like jkt potatoes, pretend meat with baked beans and chips, macaroni cheese, those tortilla wraps, with a choice of fillings, tinned veggie sausages and beans topped with potato mash and cheese instead of shephers pie, roast without the meat, 'sausage' casserole - I'm lucky, as they eat quorn, which makes life easier. The most bizarre thing they eat is rice, with baked beans and grated cheese stirred in! I usually have vegetables as a side dish, sometimes topped with grated cheese (if it's broccoli!)

I'm not a veggie, but:

Ratatouille? Great with pasta, rice or couscous, and nice with some grated cheddar on top to add a bit of fat/protein

Veg chilli - I usually end up with about 8 veg in mine! Basically, onions, tinned tomatoes, tinned chilli beans (they're not too spicy - my not quite 2 year old eats them fine - then can choose to add more chilli if you want it), and then whatever veg you have - I usually do courgetts, carrot, tin of sweetcorn, peppers, squash or sweet potato, mushrooms. I sometimes add a tin of another type of bean as well to add a bit more protein (blackeyed beans or pinto beans are good). Good with baked potato or rice or piled into tortilla wraps with guacamole, sour cream, salsa and cheese.

Chickpea and tomato stew - onion, tinned toms, chickpeas and then a few spices like cumin, coriander and chilli if you like. You can probably do a variation on this with any sort of bean or spices, and maybe add some pepper or carrot/celery to make it more vegetably. Nice with couscous or rice or baked potato, and partic nice with grilled haloumi if you want a summer barbecue.

i also did a nice veggie moussaka the other day - delia recipe. onion, peppers, green lentils, tomato puree, bay, cinnamon, red wine or cider. then layer with fried aubergine, and add mix of yoghurt, egg and cheese on top.

I'm suddenly remembering all my veggie recipes now Made a lovely one with DS (aforementioned 2 year old) the other day - thinly sliced potato in bottom of oiled roasting dish, then layers of aubergine, courgette, peppers, red onion, and finally tomatoes. season well in each layer and sprinkle bits of garlic throughout and fresh herbs if you have them. Then pour on some olive oil and passata. bake in oven, covered, for about 40 mins.

DS was able to do loads to help as he could do all the layering while I did the chopping, and because he made it he actually ate pretty much all of it!

Oo, thanks for the ideas! I'm kind of remebering what Iused to book now

I think risotto would go down ok, as ds1 will eat rice, and if I can make the minestrone look more like pasta and less like soup
They both like 'help yourself' wraps, so they choose their own fillings. But I feel like I always give them 'picnic food', and thats why I've got a bee in my bonnet about casserole etc!

There's no way they'd eat moussaka
