primrose hill or hummingbird cupcake recipe?

has anybody got either of these and would mind sharing? just want to see how different they are to my standard fairy cakes before buying the books cheers.

I've got the Hummingbird Bakery book and think it's ok but I haven't got a massively sweet tooth so only make things every now and again. I made the brownies out of it and they were yummy. There was a thread about this book not that long ago and the views were pretty mixed.....

I was suprised how different the hummingbird bakery cupcake recipe was to my usual victoria sponge type cupcakes.

I think you can buy it quite cheaply from The Book People.

I have hummbird one, but new so have only made brownies so far. they were quite lovely!

120g plain flour
140g castor sugar
1.5 tspns baking powder
pinch salt
40g unsalted butter at room temp
120ml whole milk
1 egg
1/4tspm vanilla extract

vanilla frosting
250g icing sugar
80g unsalted butter
25mls whole milk
drops vanilla extract

put flour, sugar, baking poweder, salt and butter in bowl and combine until fluffy
gradually add half milk and combine.
whisk egg, remaining milk, vanilla extract in a separate bowl, then pour into flouyr mix and continue beating until mix is smooth. do not overmix.
poon into cases until 2/3 full, bake 20/25 mins or until light golden brown.
leave cakes to cool slightly before turning out onto cooling rack.
When cold, spoon on frosting and decorate with 100s and 1000s.

I will be interested to see what you think of them OP - come back and let us know. I have found the Hummingbird recipes very variable (and their quantities are all over the place - if you want a laugh, look at the rocky road recipe - it starts with 1.2kg of chocolate and goes on from there - and makes, according to them, '12 generous portions' - according to me it makes enough to feed a party of 25 DC + parents and have plenty left over)

Hummingbird cupcakes are delicious. And they stay really lovely for a couple of days without going dry or yucky

well, I made them, definitely not as good as my usual fairy cakes though. (DH's verdict). Bit weird really. Will see how they are tomorrow, maybe they'll be better???

Well,I made some on friday night, and they wre a bit rubbish, but I have made good ones from that recipe in the past. They are VERY sweet, though, so go a bit sticky the next day. I now add less sugar as I thought they were just too sweet.

We just made the banana and chocolate cupcakes and they are delicious. Then I went to my sister's and she had made the double chocolate chip cookies from the Hummingbird book. Both a great success. I'm a happy bunny.

I agree banana ones and chocolate ones are good. Vanilla one I personally find too sweet, and the blueberry muffins were inedibly sweet.

I got the Primrose one for christmas, so far I have made chocolate cupcakes with vanilla frosting (cupcakes best I have ever eaten, honestly, but icing far too sweet for me) and lemon cupcakes with lemon frosting (delicious) and I have even made a pilgrimage to Primrose Hill to sample a coffee cupcake (totally delicous).
I think the main secret that I have learned is to have everything at room temperature (this does mean a bit of planning as you have to get everything out of the fridge an hour or two before you want to bake). It does seem to make a difference.
The book was going quite cheaply on Amazon, I think it's worth the money at that price. Did flick through the Hummingbird one in a shop but it didn't appeal to me as much.

Here it is - interesting to compare to Hummingbird recipe which has relatively much less butter. This is to make 12 regular vanilla cupcakes.

110g unsalted butter at room temp
225g caster sugar, preferably golden (I just used normal white)
2 large eggs
150g self-raising flour, sifted
125g plain flour, sifted
120ml semi-skimmed milk at room temp
1 tsp vanilla extract

Cream butter and sugar, add the eggs one at a time mixing for a few minutes after each. Combine the two flours in a separate bowl and add one third to creamed mix, beat well. Pour in one third of milk/vanilla extract and beat. Repeat till all flour and milk combined. Fill cupcake cases about 2/3 full and cook at 160 degrees (fan oven) or 180 degrees (non fan) for 25 minutes or until slightly raised and golden brown.

Frosting (warning - very sweet!!)
110g unsalted butter at room temp
60ml semi-skimmed milk at room temp
1tsp vanilla extract
500g icing sugar, sifted
