Fattening up recipes please

Can anyone help me think of things to feed my 15 month old up with? He's a pretty good eater but won't drink any milk and has hardly put on any weight all winter. HV not too bothered (but I am - he's tiny!), she just says try and get more calories into him, esp dairy - so i've been putting a bit of double cream in wherever i can (porridge, tom soup, pasta sauce etc), and cheese wherever possible (though he doesn't like the taste v much so can't make it too cheesey). Seem to have exhausted all my own ideas and wondered if anyone's got any favourite fattening up recipes they'd care to share? Was wondering about a nice mild curry of some sort? And any not-too-sweet puddingy things?

Peanut butter works really well, slathered on bread with a thick layer of butter.
My Ds had real problems putting on weight up till 3 years old and it was down to too much dairy as it inhibits iron asborption, but peanut butter saved the day. Its full of calories in such small portions, loads of protein and vitamins.

I can also recommend coconut powder, put it in anything, it's very fattening. Tahini is also very calorie dense, as is avocado - blend with banana and cream to make a pudding.

I give my dd custard for pudding as well as the usual yogurts. I add cream to the custard!

I also am not averse to giving the odd square of chocolate.

Make sure you put abit of olive oil or pbutter on all veg. Home made roasted chips are good, I also do a lot of roasted peppers (red and yellow ) as they are so sweet. They go well with everything!

Risotto is lovely and easy to vary.

Agree with avocado, peanut butter, double cream, and change the proportions of veg/meat/carbs on the plate. You want more of what most of us are trying to eat less off!!

You mentioned porridge, tomato soup and pasta sauce - all are "weight-losers" sort of foods imo. Maybe swap porrige for toast with butter and peanut butter/chocolate spread? Make sure the pasta sauce is a creamy one?

Puds: Steam pudding, eve's pudding, greek yog instead of normal yog, chocolate pudding, poached pears with chocolate sauce (melt choc and dbl cream together)

And go for snacks bigtime!

My DD will eat fruit cake when she's not interested in anything else, I make about one big square cake a fortnight (I normally take a slice for my lunch). With all the dried fruit in it's quite high in calories but you've also got fibre and iron in there so it's healthy...kind of...
