Spanish Omlette

Someone just gave me inspiration to make spanish omlettes for my 4 year old but i admit i'm a lame cook and don't really know how to make one, anyone know an EASY way please?

Thinly slice waxy potatoes. Put in a pan with a few table spoons of oil and leave to cook slowly for about half an hour or so (or whenever soft) add a load of beaten egg (depends how big your pan in) and when set on the bottom either flip over using a plate or put under the grill to puff up.

An easier but unorthodox way is to boil a load of new potatoes till soft and add to the pan and cover with egg as above.

Some people add onion, I don't, but I do like to add chorizo and paprika for extra flavour, and whatever veg you want to get in your LO.

I've found that they work best if you mix everything you want into the egg rather than pouring the egg into the pan around everything else - so fry potatoes / onions etc, then tip them out of the pan into the eggs, stir so everything is nicely mixed and coated, then pour the whole lot back into the pan. Otherwise things tend to burn a bit on the bottom.

Also you will need a big plate to do the flipping. A non-stick pan is essential. You'll need to loosen it away from the pan first - try to get properly underneath it while you're doing this or you'll end up with scrambled eggs.

In Spain young people of very limited culinary skill or dedication make it with crisps replacing the potatoes. Not me of course, I make it just like thereis above. Chopped parsley looks nice too.

I do mine like Bumperlicious, i also put in courgette and onion. I prefer veggi myself so I dont add sausage.
If you havnt time I have done it with tinned potatoes, it worked quite well and you only need to cook the potato till its hot, saves ages!!

Leeks are really nice in this kind of flat omelette. Also a bit of cheese is nice.
