Ideas for unexpected sat lunch visitors needs to be quick!

Just had message from db and his gf - coming to see us tomorrow, other db also here. What can I give them for lunch? It needs to be very quick to prep as dh'll have to go to the shop in the morning and I don't want to be messing round in the kitchen when they are here. Also bf a 6 week old!

Would like to give them something nice though!

Smoked mackerel pate? - flake some fillets with creme fraiche, lemon zest, a little creamed horseradish and lots of parsley.
Good with fresh sourdough/similar bread and salad.

Stick a big hunk of cheese out as well with some onions, pickles also?

Frozen raspberries make an easy pudding. Blitz them in a blender/fproc with some icing sugar and serve as a coulis with good bought chocolate brownies.

Or healthy pud sliced pineapple with passion fruit and a splash of ornage juice.

Roasted cherry toms on baguette:

slice baguette on the diagonal

chuck cherry toms on the vine in a hot oven for 20 mins

grill baguette

bung cherry toms on top of baguette slices and sprinkle over goats cheese, extra virgin olive oil and salt and pepper

Quick tomato soup

Cook for 20mins a chopped onion, tomato juice (or hot veg stock with tomato puree added), lentils (red or green), salt, pepper, dried herb of some sort (eg thyme) and half-teaspoon of marmite / splash of worcester sauce or soy sauce

Blend and serve

Also YUM

Quick pea soup

Peel a couple of cloves of garlic. Chop in half. Put raw garlic in saucepan of boiling water with frozen peas. Maybe add some stock powder. Add 25g of butter. Cook until peas are done. Blend. Add salt and pepper. It's delicious at this point, but to make it into Pesto Pea Soup add a couple of dessertspoons of pesto sauce - it's really nice. Or add some grated parmesan. Also yummy.

Oh yes, good point coldtits! Ask guests to pick up something already prepared (eg carton of nice soup and some bread) from the supermarket on their way!!

I had unexpected success with an emergency lunch of pasta, jarred pesto, a few chopped up olives and tomatoes and grated cheese the other night. Although I agree, 6 wo baby = excuse.

What shop is he going to? Can he get, say, nice ham, some nice cheeses, crusty bread, mayo, relish, bag of salad, nice pork pies, olives, sundried tomatoes, anything else picky from the deli section of the supermarket or whatever and just put the stuff out on plates?

Thank you ladies. Luckily I remembered I had a couple of bags of frozen bolognese. DH got some fresh pasta and bag of salad leaves + garlic bread. Yum! And just had nice cheeses for pudding.
