We have a surplus of the stuff and don't really drink it.Would love some recipe ideas to use it up!

I'm sure someone will be along soon with some recipies but you can freeze the wine in little bags to use as and when you need it.

coq au vin seems the obvious one. Really you could add it to any stew or gravy or whatever.

Nigella does a coq au vin and a greek lamb stew, both requiring a lot of white wine IIRC.

Are you mad? Never mind, here's my typical (non-lush) uses for the stuff:

  • Use to make gravy after roasting a chicken (pour into hot roastinig pan, lossen all the yummy bits of the pan, reduce, seive)
  • Steamed mussels in white wine (really simple and yummy)
  • Chicken casserole made with half white wine, half chicken stock. Nice with garlic, rosemary/thyme, etc.
  • Essential when making risotto of any kind
  • Any meat ragout such as bolognese sauce needs it
  • Add some to sugary water and vanilla when poaching pears.

Loads and loads of others.

as long as you bubble it up and reduce it, it justs adds depth of flavour rather than alcohol.

great for sauces eg. chicken juices from pan, deglaze with wine, add tarragon and splash of cream

adds depth to most gravies with roasts

any casserole - add before stock and bubble up for 1 - 2 mins

spag bol - as for casserole

pickles and chutneys with vinegar added too

if you fancy using in a pudding, I expect there are some jellies using it if you google

or add to a punch and drink it that way

Moules frites? (we're having that tonight). I always cook them with white wine.
