Hi, I am trying to cut down on meat, I want to be able to have 4 vegetarian based main meals per week. Unfortunately my vegetable repertoire is limited to vegie lasagne , curry and ratatouille.
Any suggestions for easy vegetarian recipes

What about a nut loaf kind of thing? I don't have a recipe but my MIL makes one that is cracking - it's lovely warm in the winter or cold with a big salad in the summer. Also veggie stirfry with noodles. Oh, and veggie haggis with mash (don't know if you can buy veggie haggis outside of Scotland though!).

Tommy, last time I made them I made it up as I went along, it was trial and error but IIRC I cooked some onions and garlic, mixed them with kidney beans and breadcrumbs, shaped into burger shapes, dredged them in flour and then shallow fried. You could bake them instead though and it would be less fattening. Also, if you have time, let them set in the fridge for an hour before cooking them. Can't promise that's a fab recipe but I tinhk I liked them, the children didn't!

I made a lentil veggie hotpot the other day that www had posted a while ago and it was great - the kids loved it. healthy, easy, tasty and cheap. It's on another thread - maybe search under veggie hotpot in food

Broccoli Pasta Bake?
Cook some broccoli. Cook some pasta.
Put both in an overnproof dish.
Spoon on some ready made veggie friendly salsa sauce (eg Doritos Dip)
Make a cheese sauce (either your own or Bisto Cheese granules sauce if you're in a real hurry) and pour it over. Sprinkle some veggie cheese over the top.
Bake for about 15-20 mins at 180 degrees or gas 4.

cowboy hotpot
(a big family favourite)

1 onion, sliced
1-2 red peppers, sliced
2 carrots, chopped
green beans, chopped
1 can baked beans
1 small can sweetcorn, undrained
1 tablespoon tomato puree
salt & pepper
cheese, cubed
couple of potatoes, thinly sliced
2 tablespoons butter, melted
american bbq spice (original recipe suggests 1 tbsp, we add about 3)

  1. fry the onion. add red pepper, green beans and carrots

  2. when those are softened, add baked beans, sweetcorn with liquid, tomato paste and season with salt & pepper. bring to the boil, then simmer for five minutes.

  3. transfer the vegetables to a ovenproof casserole dish, and scatter the cubed cheese on top.

  4. cover with the sliced potatoes, brush with melted butter and bake until potatoes are cooked and golden brown on top.

i parboil the potato slices in my steamer. and i use a wok for the vegetables. we particularly like this recipe because it doesn't involve any quorn or tofu and it freezes really well.

thanks, all those ideas are great but I need recipes, as I cant cook without one.
I have just put on a vegie and chickpea curry for tonight. I can workout how to do that, but need to recipes for complicated soounding this like nut roasts and vegie burgers.

Yes I do eat fish, but DH is very fussy withit. I want to keep the four nights per week purely veggie.

all supermarkets should do it. i've found it in asda, sainsburys, tesco and morrisons...
it could just be named 'bbq seasoning' too.

Thanks WWW - I need to keep trying as w ehave friends round for a BBQ on Saturday! Poor DH keeps eating my (unsuccessful)attepmts and doesn't complain at all so I feel i shouls actually make a tried and tested recipe

Country Garden Cottage Pie

2lb /900g potato, mashed
2 tbsp vegetable oil
1 medium onion, chopped
6oz / 150g green lentils
1 clove garlic, crushed
4oz / 100g grated vegetarian cheddar cheese
2 carrots, diced
1tbsp tomato puree
1 medium green pepper, diced
4oz / 60g mushrooms, sliced
1 tsp dried basil
pinch cayenne (optional)
salt and pepper

  1. Cook the lentils in plenty of water until just soft, drain, but save ½pint of the cooking liquid.
  2. While the lentils are cooking saute the onion, garlic, basil and cayenne in the oil until soft but not brown.
  3. Add the carrot, pepper and mushrooms. Cover and cook over a low heat for 10 minutes or until the carrot has softened.
  4. Add the cooked lentils, tomato pur&ecute;e and seasoning. If the mixture is very thick add a little of the reserved cooking liquid from the lentils.
  5. Cook for a further five minutes, transfer to an oven-proof dish, cover with mashed potato and sprinkle the grated cheese on top.
  6. Bake for 30 minutes in a moderate oven, until the top is golden brown.

I had a gorgeous chickpea and hazelnut thing last weekend but i don't think its suitable for kids as it had whole hazelnuts in it. I suppose you could substitute chopped ones.

I've been veggie for donkey's years. Last night we had potato gnocchi (2 packs) cooked as per packet instructions (takes literally 2 mins)once drained I added a glug of olive oil, salt, pepper, parmasan, chopped fresh mint and toasted walnuts. Served with green salad - yum.

Another current favourite is this dhal:
125 grams each of yellow split peas and red lentils. Add 1.5 pints of hot water, bring to boil, cook for 20 mins til red lentils turn to mush.

Meanwhile heat a teaspoon of oil in a frying pan and add 1/4 teaspoon of black mustard seeds, cumin seeds, onion seeds, fennel seeds, some chillie flakes and 1/2 teaspoon of turmeric. Fry until the seeds begin to pop.

When lentils are cooked add the fried seeds, lemon juice, fresh coriander and salt (don't add salt before cooking or the lentils will go hard)

Serve with chapattis.

Disslocated, I am also a long-term veggie and a huge fan of dahl. That sounds lovely, but do you think it's important to use split peas too? I can never be bothered to soak the buggers and so end up not using them at all! Does it give it an extra va-va-voom so have them? If so, I'll definitely give a whirl...
