Prepare roast potatoes in advance - HOW?

Hi everyone, I would like to make my roast potatoes in advance, and am wondering how best to do it -

Parboil and freeze? Do all the roasting and refridgerate? They have to be ready for tomorrow, and I would prefer instant get-home and munch rather than cook for 45mins first.

All help appreciated!

If it was me, I'd parboil them then toss/bash them in the pan with a couple of tbsp of dry semolina (Nigella-style).

Then I'd le them cool in the pan then refridgerate. Get the veg oil very very hot in oven then add the potatoes and cook til crunchy and browny-golden. They are lush done like this - promise!

I do the Michael Caine method using par boiled floury potatoes and cold olive oil.
Since heated oil isnt a factor, the potatoes should wait happily in the fridge until needed.

It doesn't take much longer than 40 mins but it depends on how hot/efficient your oven is. If you open the oven and give them a shuffle every 15 mins you'll soon see when they're doing. If they're going too brown too quickly, take the heat down a tad.

When you add the semolina, put the lid back on the pan, hold it all together with oven gloves/teatowels and give the pan a really good shake so they're coated nicely andthe edges get roughed up. This makes them more crunchy on the outside.

you need to have about half an inch of oil in the pan. They ain't very slimming but they're a gorgeous treat! good luck

So is the conclusion that I'd be best not to roast them in advance and then reheat?

think they will go soggy if you roast then reheat
