Do you want posh or everyday type??

For wheat free i would say think traditional meat & 2 veg type dinners but substitute the meat for something else. That way you avoid the gluten in pasta, bread etc.

Fish pie

home made fish cakes veg and chips

aubergine bake...layers of aubergine, parmesan and basil leaves with a tomato sauce.

omelette

salmon teriyaki and rice - really easy but lovely...

Delia has a lovely seabass dish with puy lentils. really simple - grill the fish fillets, squeeze with a lemon.

boil the lentils, add finely chopped red onion coriander, skin & deseed tomatoes and chop. add all to just warm lentils with some lime juice (let the lentils cool or it all goes mushy).

if you want to be super healthy serve with spinach.

then tuck into a big fat dessert (you anyway).

Indian food offers many options. Some sort of delicious veggie curry with dhal and rice? (Guess what we're having tonight )

Veggie Risotto - making sure you use wheat free stock like Marigold. Could use asparagus, green beans, peas etc. Or kedgeree.

My cousin has celiacs and so last time she came for dinner I made this, it's a real winner, looks v.impressive and it's easy to make, you can prepare it beforehand and then just stick it in the oven when people arrive. Serve just in the middle of the table with some new potatoes.

Hope this helps.

Seabass baked in a bag.

Ingredients
tin foil
2 pounds whole sea bass
sea salt
black pepper
fennel, tops
handful basil
1/2 red onion, thinly, sliced
bay leaf
olive oil
2/3 lemon, juiced
2 ounces butter

Directions
Ask your fishmonger to gut and scale your fish.
Lay out a piece of tin foil and fold in half. Place the sea bass on top of the foil and score the flesh about 2 inches apart on both sides. Rub plenty of salt and pepper into the scores.
Lay out the fennel on the foil and place fish on top of the fennel and push to one side of the foil.
Cover liberally with the basil, red onion and bay leaves, making sure you tuck some into the belly.
Drizzle over plenty of olive oil, lemon juice and knobs of butter. Fold over the left hand half of the foil and seal the 3 sides to gently hug the fish.
Place on tray and bake in a preheated 375 degree oven for approximately 16 minutes (8 minutes per pound). Remove from the oven and allow to stand for 3 to 4 minutes without opening the bag.

you're welcome, it's my party piece! In fact, I'm making it this weekend as we've got my Mother in law over for a special valentines weekend!
