Pancake batter

I was wondering this morning if pancake batter keeps at all.

I use Delia's recipe:

110g plain flour
2 eggs
7oz milk and 3 oz water
tablespoon of melted butter.

My DS adores pancakes, but if no one else is in the mood there is lots of batter left. Can I put the rest in the fridge for breakfast the next day? Would the melted butter in it go funny if I did this do you think?

Also, any ideas for a savoury pancake that doesn't involve a cheesy sauce?

Why not use half as much?

Not sure if it keeps in the fridge, we never have that problem in our house!

Or make them all into pancakes and put in an airtight container?

I like bacon with pancakes and maple syrup (not strictly savoury but very nice)

I've kept leftover pancake batter in the fridge overnight and then used it in the morning. It needs beating again & it's been fine. Dc love pancakes.

Good point about halving recipe Hellbent .... was sort of wondering why I didn't as I was posting this.

I'm guessing its because the recipe is ingrained on my brain and I can't function properly at 7am!

DS (3.5) will eat 4 large pancakes with either maple syrup, chocolate spread or sugar/lemon on for breakfast ....... and then ask for them again at lunch and supper, which is why I think I need savoury ideas!

Here is a savoury idea...

Carrot & Sweet Corn Pancakes

A firm carrot (50g)
1 medium egg
100gm self raising flour
1 teaspoon baking powder
125ml milk
1 tablespoon sweet corn
1 tablespoon chopped parsley (optional)
Oil for greasing

  1. Grate the carrot.
  2. Break the egg into a small bowl.
  3. Sift the flour and baking powder.
  4. Make a hole in the centre of the flour and add the egg.
  5. Add the milk.
  6. You will end up with a thick batter, beat it well.
  7. Add the carrot, sweet corn and parsley

It keeps fine - if I have just finished a milk bottle I put it in there as then you can just shake to mix it again
