Mine always have the taste and texture of homemade playdoh (to be fair the ingredients are almost the same)

Give me your best Recipe and technique please!

don't have a recipe to hand, use the one on the side of the suet box

do you leave the dish lid off when the dumplings are in?

Yes I leave it off (not through choice - DS smashed the lid of my casserole dish grrrr)

I use Jamie Olivers - just self raising flour butter and salt

8 oz self raising flour
4 oz suet
mixed herbs
water to mix

put all in bowl add water to make a dough. makes 8 dumplings. place on top of stew and cook for about 30 mins.

I use the same proportions as cece does, though just salt & pepper rather than herbs usually. You only need just enough water to make it all bind together, and best not handle it any more than you need to get it all together - stir the dry ingredients first, then you don't need to do much when you add the water.

No - I always did think there was something missing.

They end up like shortcrust pastry on the outside and playdoh in the middle.

Oh I really hope my local shop sells Suet.

they should sell the ready mix packets, they are just flour and suet, you can add extras to that. much easier than faffing around (imo anyway) i do love a dumpling.
