What shall I do with left over roast pork?

OK so had pork for lunch yesterday and would normally have cold pork and chips for tea the day after if any left

Dh has called and is having a shit day and is going to be home after dd has gone to bed so thought i would try and cook something nice out of it any ideas?

Make a warm, rich, cidery stew with it. Mash and veg and you're sorted. Mmmmmm.

Asian salad with ginger, chilli, soy etc

Or spice it up with some tinned tomatoes, paprika, peppers, onions etc and serve w rice

But then my DH is a spice fiend

found this one but hvae only got strongbow and wasn't planning on going to the shops so not sure that'll work.

onions/or red onions
celery
herbs
tin of toms
chicken stock
a little garlic
little flour

Do you think oven or slow cooker?

Also thought I'd pop some dumplings in.

Got some cream so can make naughty mash.

If the pork already cooked I would guess oven vs slow cooker. Sounds yum. I would maybe leave out the flour and stir through a tablespoon of cream at the end to make it very naughty. Sherry works well with pork too, as do mushrooms.

I'd either go the creamy route - mushrooms, veg, sherry, cream

Or the spicy route - peppers, smoked paprika, fresh chilli, tinned tomatoes

with the creamy one you would obv also need stock - I use chicken but veg good too

OrmRenewed - i know is very yummy cold but as dh will ahve been out in the cold for over 12 hours thought i should warm him up a bit. Has nothing to do with the big arguement we had last night cause that was not my fault

We had roast pork yesterday, and tonight we're having roast pork curry.

If you can, marinade the pork first in yoghurt, paprika, coriander (ground), cumin, turmeric, and chilli powder.

LOTS of onions and garlic with garam masala, some fresh ginger if you have it, and some more of the herbs that went into the marinade.

Then add the pork, and add mushrooms, peppers, chillies and fresh tomatoes. THen add a tin of chopped tomatoes.

Usually the consistency is fine - if you like a more saucy curry, feel free to augment with a jar or Patak's/Sharwoods.

If you want to add more veg, then frozen chopped spinach works really well (as does fresh, but it's much pricier) and you can add peas 5 minutes before you serve.

ideally add a bunch of fresh chopped coriander.

Serve with rice and naan, and if you like, homemade raitha is dead easy to make. (Chopped cucumber, one clove of garlic, a teaspoon of mint sauce and a load of yoghurt).

Thanks everyone have gone for a stew and hvae now prepped everything for later, i thinkg i will be added dumplings as well.
