Egg Fried Rice

How do I make a good egg fried rice? I have tried for years, doing different things, different order of egg/rice/veg, making sure the rice is cold, but it never tastes as good as the chinese take-away! Have just made one tonight which is really not very nice at all.

Any thoughts or hints and tips??? (Apart from going to the take-away!)

i think you tube had some good recipes of egg fried rice.

the last time i made it i think i did, oil, peas, spring onion, eggs beaten with a touch of water in it, cook until slightly scrambled, then add cold cooked rice, pepper and soya sauce. mix continuously.

oil to pan, and break some eggs in. stir a little bit - you don't want to end up with scrammbled eggs. add rice (mine is usually cold from day before - they do say you can get foodpoisoning but i never have in 20 odd years) and other things - peas, sweetcorn, soya sauce, spring onions chopped, prawns, bacon - sort of whats ever around that needs eating. don't know if its as nice as takeaway, but my lot eat it

I make this often. Use cold rice, make an omlette and roll it up and cut it into strips. Add it to stir fried veg, add rice and stir continuosly to break the egg down. Add about 100 mls water with 5tbsn soy, 5tbsn oyster sauce and some sesame seed oil. Yum.

Let the eggs nearly completely cook in the wok (with oil), chuck in cold, cooked rice, peas, spring onions, soy sauce. Stir fry quickly. Bingo.

This is a really good recipe I found on www.mydish.co.uk there are a few other variations on there as well, you should check it out.

Ingredients

1 cup Cold cooked rice
2 beaten eggs
3 tsp Soy sauce
½ tsp Ajinomoto
1 tsp Crushed garlic
1 small Chopped onion
Salt and pepper to taste

Method
1.Heat oil in a pan and add onion and garlic. Fry until the onions are translucent.

2.Add the eggs and scramble it.

3.Add rice,soy sauce,salt,pepper and ajinomoto.Fry for about 5-6 minutes.

4.Enjoy!

Tips

You can add veggies and meat of your choice to this fried rice.

Don't go crazy with too many ingredients - i like egg, spring onions, cabbage (thinly shredded white/light green stuff rather than savoy), and maybe beansprouts, plus usually chicken, although often chicken and prawns. If i have some leftover roast pork, I fry that until it starts to crisp and then add that which is really tasty.

Sesame oil and soy sauce to taste makes a big difference - I stir sesame oil into the eggs as I beat them which is a good way of doing it as the flavour then sort of spreads through the dish. You shouldn't cook in just sesame oil as it has a low smoke point - I tend to add it part way through as a flavouring rather than as the cooking oil (just use veg oil for that). A teaspoon of shredded ginger and some garlic is also nice.

I do the egg first - stir it round like scrambled then once it is coagulating I add the other ingredients (meat first then veg) and start to break the egg up. Finally rice and flavourings.

Towards the end let the rice sit on the bottom for a while to get some crispy bits.

I aim not so much for takeaway fried rice (I think that is too oily for home cooking really) as I do for Wagamama's cha han - don't know if you've been to wagas but that is their take on fried rice and is lovely. Lighter and less oily than fried rice from takeaway.

Great thanks! I never used oil for frying the eggs, so maybe that was a problem and there are some other great tips. I have also had the Wagamama one recently and thought it delicious! Love the idea of the sesame oil beaten into the eggs.

Going to give it a go on Weds when am eating alone, with a back up bar of chocolate!!

PS, what is Ajinomoto?????

  1. Make thin omelet, roll it and slice and reserve.

  2. fry cold rice in wok with a little oil, add veggies (sweetcorn, peas, carrots, very thinly chopped onion) and sliced omelet, season (soy sauce, sparingly) and mix.

You can add cubes of ham or shrimp and fry them in oil before you throw in the rice.

if ajinomoto is what I think it is (MSG) just forget about it. It's a flavor enhancer, very very nasty...

My Korean friend does a yummy version of fry rice as follows:

Mix chives (lots) with egg and make omelet.

fry (cold) rice in a bit of oil little oil season with the following sauce: 1tbsp sesame oil+ 1 tbsp miso paste + 1tsp vinegar + 1/2 tsp sugar.Then add chopped omelet.

Works very well to stir fry noodles too

I think it's Chinese salt and it's technical term is monosodium glutamate.

Well, I had some leftover rice so made this for my lunch! The omelette was definitely the secret - made SUCH a difference. Had never done that before. Was delicious, so thanks mumsnet. (Oh, and going easy on the soy sauce stopped it going soggy)

So glad have cracked this one now. Next thread will be about fairy cakes
