corn bread - is it always disgusting?

or is it just mine?

Just made the corn bread from The Hairy Bikers Mum Knows Best programme the other night and it's really horrible! I followed the recipe (such as it was ) but it just tastes very eggy.

I've never made it before and won't be again! Is there anything I can do to salvage it ?

Made Nigella's version a few weeks ago and yep - disgusting. Even DD1's boyfriend - eat anything and everything type - couldn't finish his. Was truly yuck.

My DH makes excellent cornbread! maybe the recipes aren't quite right??

If too eggy or soggy try using wholemeal flour instead of white maybe?

Hi Tommy, ok, living dangerously putting this up on anti-cornbread thread

It is from the Moosewood Restaurant new classics cookbook (excuse the American measurements)

1 c cornmeal
1 c whole wheat flour or wh wh pastry flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
1/4 c vegetable oil
1/4 to 1/3 cup brown sugar (DH uses less)
1 cup nonfat plain yogurt or buttermilk

Preheat oven to 200c.
butter a 9-inch pan or 7x11 baking dish.

Sift cornmeal, flour, b powder, b soda, salt in large bowl
Whisk eggs, oil, sugar and yogurt/buttermilk in other bowl.
Mix into the dry ingredient until just blended (do not overmix).
Into the oven for 20-25 minutes.

One thing I should add is that you need to eat it fresh, right out of the oven -- if you do have any leftover you need to fry it or dunk it in soup or something.

Oooh just read up in the cookbook about salvaging cornbread too:

"Leftover cornbread, cut into bite-sized cubes and mixed with sauteed herbs and minced vegetables can be a delicious stuffing for winter squash. It also makes very tasty bread crumbs."

I'll bear that one in mind although I'm afraid we chucked it out yesterday.

DH said I was trying to get polenta back in to thehouse by stealth (it's the only thing I've ever cooked that he wouldn't eat )

Not sure I'd make it again but the frying suggests that realy the only way to make cornmeal palatable is to add lots of fat

The recipe I used didn't have any sugar in it so that probably makes a difference

I make it and love it.Spent a fair bit of time in American south so know how it should taste too.

Needs a fair bit of sugar, even if eaten wiuth savoury stuff.I use recipe in 20 year old Keith Floyd boook.

Ha thats so funny, dp just made this care of the hairy bikers and if not vile it was very odd and bland, they made it seem so tasty lol.

I've made cornbread, Johnny Cake, and cornbread muffins, and none of them were well received. Too sweet, too dry and too gritty. At my work canteen they make quite nice cornbread muffins though, but they are full of chilies (something fairly mild and green) which cuts through the sweet, and adds more juiciness. I did make quite nice cornbread dumplings though (cooked in chicken soup), although I'm not sure they will reheat well.

god i've got three packs of teh bloody stuff and nobody will eat it. my dad even gave me one. it is inedible i thikn unless has enormous amounts of fat or sugar in it. even italians put half a pack of butter and a ton of parmesan.

I make nice cornmeal dumplings to go on top of a carribean stew. Jamie Oliver recipe.

thanks all. might give the dumplings a try (and not tell DH what they are )

the recipe I used didn't have any sugar in it so may try that too. The different flavourings sound good but DS is Mr Fussy from Fussy Land so I thought he might like the blandness of it!

My kids LOVE cornbread. OH won't eat it because it is yellow!
very basic cornbread recipe

WE eat this with beans, soup, casserole....The children also love muffins and pancakes
