I have 2 aubergine in the fridge. Inspire me! What can I make for supper? To feed 2 adults and 4 dc's.

DP makes a delicious dish which is one of my all time favourites -its a layered dish (layers of aubergine and feta or mozerella) with a passatta-type sauce, topped with loads more cheese, especially parmesan. Baked in the oven.

oops posted too soon -I meant to add that if you google recipes for Aubergine Parmigiana you'll come up with roughly the same dish

Is it ab it like eating a cheesy sponge though? I always imagine aubergines to be spongy

If you need carbs with it some garlic bread or ciabatta is perfect

mamaG -apparently the secret is in pre-treating/cooking the aubergines. DP tends to slice and dry fry them beforehand.

That way you avoid the slimy texture you get with them sometimes.

I luuurve aubergine, they aren't spongy at all, in fact i find them quite meaty - as a veggie i really like them as part of my food because they give a "comfort food" aspect to it.

You are "supposed" to cover in salt and leave covered with something heavy for about an hour, then wash and dry - apparently it takes the bitterness out. But its a hassle and apparently the newer varieties of aubergine are not bitter. I love em.

I couldn't wait - so we had in for lunch, and it was scrummy (although served it with sausages on the side to keep the kids happy)! 5 empty plates (ds2 doesnt eat anything!), so a huge success! Yummy!

Did you follow a recipe or just make it up as you went along?

DP is very much an intuitive cook and doesn't tend to follow recipes but always gets great results.

I just made it up as i went along! I made up a tomato sauce with garlic and layered it with mozarella in the middle layers and on top and them a ton of parmesan on top!
I stuck sausages on the side as dc's would have not eaten just aubergine, but it went down a treat. Dh loved it - we are doing it again next weekend.
