need a chicken casserole type recipe

I could just throw it all together
chicken thighs, legs.
was thinking carrots celery, potatoes, that kinda thing. but definitely not a lot of preparation
Any thoughts?

my favorite quick prep chicken cassarole,
is to brown off the meat brown off the onion carrot celery put together with salt and pepper and a bay leaf, add 1 bottle of white wine cover and leave for an hour, whilst doing this I put the rice cooker on so the rice is ready at the same time.

I did a nice one the other night from Jamie Oliver's Ministry of Food book.

Boneless chicken thighs (I used breasts as that is what I had)
A chopped onion
2 chopped carrots
2 sticks celery chopped

Preheat over to 200 degrees

Fry veg in some oil in a flameproof casserole
Add chicken
Add 3 sprig fresh thyme (I used dried)
Fry for 5 mins or so
Add tblspn flour and stir
Add 500 mls white wine
Add a tin chopped tomatoes

Put in oven for an hour covered, then remove lid for last half hour.

I served with mashed potatoes.

It was nice and easy.

Oh, and I only have dried herbs so I'm using some dried tarrogan. Thyme would work well too.

My favourite chicken casserole at the mo is a simple white wine / stock one with the brilliant addition of artichoke hearts. Scrumptious. I use the chargrilled ones you can by from the deli counter or in jars of oil. Just lightly coat the chicken pieces (thighs best) with flour, then brown off in a little oil and add onions, garlic, then stock and / or wine, herbs like sage or thyme, and some chopped artichoke hearts. I leave on a low simmer in the oven and serve with rustic potatoes (i.e. my shorthand for I can't be arsed peeling them). Fabulous French type flavours.

I did a lovely one the other day using chicken legs, an onion, three leeks, some mushrooms, some veg stock, bay and thyme, and a handful of porcini I found in the back of the cupboard. They really beefed it up. I didn't use flour to thicken because I'm trying to eat low-carb at the moment but you could add some white wine and some flour. Delicious with celeriac mash. The liquid goes dark brown from the porcini. I didn't add crispy smoked bacon but that would have been nice too.
